A little puff of pecan-y goodness. Melts in your mouth. Perfect for the holidays. I have had this in my Christmas Cookie repertoire for many years.

Yield 36 cookies

Number Of Ingredients 7

1/2 cup salted butter, softened
2 tablespoons sugar
1 teaspoon vanilla
3/4 cup finely chopped pecans
1 cup cake flour
1/4 teaspoon salt (or less)
powdered sugar, reserved

Steps:

  • Preheat oven to 300°.
  • Put on some Christmas music.
  • Chop pecan in a food processor or by knife.
  • Beat butter until soft with a mixer. Add sugar, vanilla, and pecans. Carefully add flour and blend well.
  • Coat hands with flour. Use a teaspoon scoop or a teaspoon and shape into cherry-size and place on a parchment-lined or greased cookie sheet.
  • Bake at 300° 15-20 minutes.
  • (These should be light in color. Do not brown!) While cookies are still quite warm, roll them in confectioner’s sugar. When cool, roll in confectioner’s sugar again.

1 cup packed light brown sugar
2 cups sugar
1 cup milk
3 tablespoons butter
1 1/2 teaspoons vanilla extract
1 cup pecans, coarsely chopped

Steps:

  • In a 3-quart saucepan, combine the sugars and milk, and bring to a boil over medium heat, stirring constantly.
  • Continue cooking, without stirring, until the mixture reaches the soft-ball stage (236 degrees F on a candy thermometer). Remove from the heat. Add the butter and vanilla, but do not stir. Let the mixture cool, without stirring, until it reaches 110 degrees F and the outside of the pan feels lukewarm, about 40 minutes.
  • While the mixture is cooling, butter an 8-inch square pan. With a wooden spoon, beat the mixture until it becomes thick and loses its' gloss. Quickly stir in the pecans and pour into the pan (Don't scrape the sides, since they may be sugary).
  • When firm, cut with a sharp knife into 1 1/2-inch squares.

  • For crust: Preheat the oven to 350°F. Butter or spray the bottom and sides a 13x9-inch baking pan with baking spray. Line the pan with parchment paper or foil letting the excess extend over the edges of the pan.  Cube the butter and place in a saucepan over medium heat. Cook until butter smells nutty and the solids and turned brown, 6-8 minutes. Immediately pour the butter into a medium bowl, top stop the cooking. Whisk in the sugar and salt. Add flour and stir until it is fully moistened. Press the crust evenly into the bottom of the baking pan. (The crust will be moist. Press carefully to reach all edges and corners of the pan). Bake for 15 minutes. Remove and lightly press down any large bubbles in the crust.  For the filling: In a large bowl, whisk together the melted butter, corn syrup, sugar, eggs, vanilla, and salt until smooth. Stir in the pecan halves. Pour over the baked crust. Bake at 350°F for 30 to 35 minutes or until the topping is puffed and set (it should not wiggle). Let cool completely in the pan. Use the excess parchment or foil to lift the bars out of the pan. Cut into squares to serve.

  • Melt caramel and cream in top of a double boiler over medium. Place chopped pecans on a rimmed baking sheet. Unwrap frozen candy logs. Carefully dip each log into hot caramel, letting excess drip off. Roll in chopped pecans until evenly coated. Wrap in parchment paper or wax paper, and store in an airtight container at room temperature up to 5 days. Cut each log into 4 pieces to serve.
