I received an email this morning with a couple of copycat recipes and this was one of them. Sounds interesting - starts with a boxed cake mix.

Prep Time 10 minutes

Cook Time 20 minutes

Yield 1 9 x 13 inch pan, 24 serving(s)

Number Of Ingredients 5

1 (18 1/4 ounce) package yellow cake mix
3/4 cup butter
2 1/2 cups quick oats
12 ounces preserves, your choice of flavor or 12 ounces jam
1 tablespoon water

Steps:

  • Preheat oven to 375 degrees.
  • Melt butter.
  • Combine cake mix and oats in a large bowl; stir in the melted butter until the mixture is crumbly. Measure half of this mixture (about 3 cups) into a greased 13x9x2-inch pan. Press firmly into pan to cover the bottom.
  • Combine preserves and water; spoon over crumb mixture in pan, and spread evenly. Cover with remaining crumb mixture. Pat firmly to make top even.
  • Bake for 20 minutes; top should be very light brown. Cool completely before cutting into bars.

Homemade Berry Nutri Grain Bars - My Kitchen Little image

A hearty, wholesome homemade take on the Nutri Grain bar, these are soft and jammy and make for a fantastic breakfast or snack any time of day. Makes 6 to 8 bars (depending on how thick you roll your dough).

Yield 6

Number Of Ingredients 9

1 cup whole wheat flour
¾ cup whole rolled oats
¼ tsp salt
6 TBSP cold butter, grated or cut into small pieces
2 egg yolks
2 TBSP vanilla yogurt
2 TBSP maple syrup
2.5 tsp vanilla extract
1 cup (give or take) berry jam of your choice

Steps:

  • Preheat your oven to 350 degrees F. Adjust your rack to the middle position. 
  • In a large mixing bowl, combine the flour, oats and salt. Mix well. Add the butter and, using your fingers, toss everything until the butter is coated, and broken down. You want to work it into the dry ingredients just as you would if you were making pie dough. 
  • Once the butter is worked in, add the yolks, maple syrup, and vanilla. I like to use my hands for this, but keep a wooden spoon nearby as well. When your dough has come together nicely, transfer it to a flat, clean, floured work surface. Roll out until very thin, about 1/8-inch-thick. Cut into rectangles that measure about 4 inches by 5 inches.
  • Add heaping tablespoons of jam into the centers of each piece of dough and spread it out a bit, leaving about a 1/3-inch border around the edges. Seal the edges of the dough with a fork or your fingers, ensuring that there aren’t any openings. Transfer the filled, folded and sealed bars to a baking sheet. Bake for 12 to 15 minutes or just until they’re lightly golden brown on top and around the edges. It’s okay if some jam seeps out.
  • Cool completely before eating or transferring. To store, keep in a sealed container in a cool, dry place for up to 4 days.
