Steps:
- In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
- Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
- Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).

I first had this dish at a baby shower brunch about 20 years ago. It's as good today as it was back then. You may assemble it the night before and bake in the morning. Also yummy when the family wants "breakfast for dinner."

Steps:
- Brown sausage in skillet. Drain.
- Spread sausage in bottom of 11 X 7 X 2” baking dish.
- Combine remaining ingredients and pour over sausage.
- Bake at 350 F for 45 minutes.

- Whisk eggs, milk, parsley and salt; set aside. In a 9-in. cast-iron or other heavy skillet, cook sausage over medium heat until no longer pink; remove and drain. In same skillet, heat butter over medium heat. Add potatoes and onion; cook and stir until tender, 5-7 minutes. Return sausage to pan., Add egg mixture; cook and stir until almost set. Sprinkle with cheese. Cover and cook until cheese is melted, 1-2 minutes. If desired, to with bacon, chives and cherry tomatoes.
