Homemade Funnel Cakes Recipe - Food Network image

Bring the carnival home with this classic fair dessert. Fried dough is crisp and golden brown on the outside and soft and cakey on the inside. Covered in a shower of confectioners' sugar and sprinkle of cinnamon, it's the perfect fun dessert for a casual get-together.

Number Of Ingredients 11

Canola oil, for deep-frying
2 1/4 cups milk
1 teaspoon pure vanilla extract
3 large eggs
4 cups all-purpose flour (see Cook's Note)
1 cup packed light brown sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
Sweetened whipped cream, for serving

Steps:

  • For the funnel cakes: Add enough oil to a large Dutch oven or heavy-bottomed pot to come 2 inches up the sides of the pot. Heat the oil over medium-high heat until it registers 360 degrees F on a deep-frying thermometer. Line a baking sheet with a metal cooling rack or a few layers of paper towels.
  • Meanwhile, whisk together the milk, vanilla and eggs in a large measuring cup.?? 
  • Sift together the flour, brown sugar, baking powder and salt into a medium bowl using a mesh strainer (to break up any lumps in the brown sugar). Stir the egg mixture into the flour mixture just until smooth and combined.??? 
  • When the oil is up to temperature, use your finger to cover the hole in the bottom of a 1- to 2-cup funnel (with at least a 1/2-inch hole) and fill it to the top with about 3/4 cup of the batter. Position the funnel over the pot of hot oil and remove your finger to release the batter. Let the batter flow into the oil in thick squiggles, moving the funnel within a contained circular shape about 8 inches in diameter. Fry on the first side until golden brown, 1 1/2 to 2 minutes, then use a spider or tongs to carefully flip to the second side and fry for an additional 1 1/2 to 2 minutes.?Remove to the wire rack or paper towels and let drain and cool slightly. Repeat with the remaining batter.??? 
  • For topping: Dust the funnel cakes generously with the confectioners' sugar, sprinkle with cinnamon and dollop with whipped cream before serving warm.?

I was fortunate enough to happen upon this recipe for my great-grandmother Iny’s Prune Cake a few years ago.

FOR THE CAKE:
1 c. Prunes
1 c. Sugar
3 whole Eggs
1 c. Canola Oil
1 1/2 c. Flour, Sifted
1 tsp. Baking Soda
1 tsp. Nutmeg
1 tsp. Allspice
1 tsp. Cinnamon
1 c. Buttermilk
1 tsp. Vanilla Extract

FOR THE ICING:
1 c. Sugar
1/2 c. Buttermilk
1/2 tsp. Baking Soda
1 tbsp. White Corn Syrup
1/4 c. Butter
1/2 tsp. Vanilla

Steps:

  • Preheat oven to 300 degrees.Cover prunes with water. Bring to a boil and cook until soft and mashable, about eight minutes. Remove from heat, drain water, and mash on a plate. Set aside.Mix together oil, sugar, and eggs. In a separate bowl, sift together dry ingredients. Combine wet and dry ingredients, add buttermilk and vanilla and stir gently until just combined. Throw in the mashed prunes and stir gently to combine. DO NOT OVERMIX!Pour batter into buttered baking dish (9 x 13 or so) and bake for 35 to 40 minutes. DO NOT OVERBAKE OR INY WILL PADDLE YOUR BOTTOM.While cake has five minutes remaining, make the icing:Combine all icing ingredients in a medium saucepan over medium heat and bring to a slow boil. Boil without stirring for 5 to 7 minutes, or until icing starts to turn dark. Do NOT allow icing to reach soft ball stage; icing should be caramel in color, but not sticky like caramel. Icing should be easily pourable.Remove cake from oven and pour on icing immediately.Allow to rest on the counter. Serve warm.NOTE: There is absolutely zero “prune effect” associated with this cake. The end.

Thoroughly grease/flour a 9 x 13 baking pan (or spray with baking spray.)In a mixer fitted with the whisk attachment, beat butter until it's soft and fluffy, about 30 seconds. Add the sugar in batches, about a fourth at a time. Scrape the sides of the bowl, then mix again until totally combined and fluffy, about 2 minutes. Add eggs one at a time, beating for 20 seconds on medium after each addition. Add vanilla and mix until combined.In a separate bowl, stir together flour, baking powder, and salt. Alternate adding the flour mixture with the milk with the mixer on medium-low until all the ingredients have been incorporated. Scrape the sides of the bowl and turn the mixer on high for ten seconds. Remove bowl from mixer stand and fold in trinkets so that they're evenly distributed. (Note that you can also tightly wrap trinkets in small pieces of aluminum foil if you prefer.) Use an offset spatula to even out the surface, then bake for 22 to 25 minutes, until cake is just set and a toothpick comes out clean. Allow cake to cool completely before icing.ICINGIn a mixer fitted with the paddle attachment, whip the butter until totally soft and smooth. Sift together the powdered sugar, cocoa, and salt, then add gradually to the mixer, scraping the sides as you go. (When combined, mixture will be very thick/crumbly.) Drizzle in cream and whip on high until smooth, scraping the sides as you go. Ice the cooled cake in the pan.Cut 12 to 16 slices of cake with a serrated knife, being careful not to tear out any trinkets along the way (most of them settle close to the bottom.)***Be sure to tell everyone that there are trinkets in the cake beforehand so they can watch for them!Each trinket means different things.
