I just discovered this recipe and can't wait to try this interesting way to use those wonderful edamame beans.

2 teaspoons olive oil or 2 teaspoons vegetable oil
1/4 teaspoon dried basil, crushed
1/2 teaspoon chili powder
1/4 teaspoon onion salt
1/4 teaspoon ground cumin
1/8 teaspoon paprika
1/8 teaspoon black pepper
1 (10 ounce) package ready-to-eat soybeans, thawed if using the frozen variety (fresh or frozen, edamame)

Steps:

  • Preheat oven to 375°F.
  • In small bowl, stir together oil, basil, chili powder, onion salt, cumin, paprika and black pepper.
  • Drizzle mixture over soybeans and toss to coat well.
  • Arrange beans in a single layer in a shallow baking dish.
  • Roast, uncovered, for 12 to 15 minutes, stirring once, until soybeans begin to brown.
  • Serve hot as a vegetable side dish or cooled as a snack.
  • Refrigerate any leftovers.

150 g Edamame Bean Pod
Salt

Steps:

  • First, remove the stems from the edamame bean pods.
  • Add a generous amount of salt and scrub the bean pods in a strainer. This will remove the fuzz from the surface of the pods.
  • Rinse the edamame under running water and strain.
  • Sprinkle on a little salt and toss to coat.
  • Then, place the edamame into a pan. Distribute and avoid overlapping.
  • Cover and heat the pan on low heat. Cook the edamame for about 3 minutes until the water evaporates.
  • Sprinkle on some more water.
  • And stir the edamame evenly.
  • Cover and cook the edamame for 3 more minutes.
  • Repeat this procedure 3 to 4 times until the edamame beans soften. This cooking method will help to retain the nutrients and savory taste while keeping the edamame from getting mushy.
  • Now, it is ready.
  • Place the edamame onto a plate.
