Total Time 25 minutes

Prep Time 10 minutes

Cook Time 15 minutes

Yield 2 servings

Number Of Ingredients 9

1 tablespoon sesame oil
1 clove of garlic (minced)
quarter-sized piece of ginger (minced)
1/2 carrot (grated)
strip of red pepper (chopped)
3 scallions (sliced)
1 egg
1 cup of shredded cooked duck
2 cups of cold, day-old rice

Steps:

  • DUCK-FRIED RICE: This works with either homemade or doggie-bag rice and duck from a Chinese dinner out. Heat 1 tablespoon sesame oil in a wok. Add 1 clove of garlic, minced, a quarter-sized piece of ginger, minced, and cook until fragrant. Add 1/2 carrot, grated, a strip of red pepper, chopped, and 3 scallions, sliced. Break in an egg and cook until it forms curds. Add 1 cup of shredded cooked duck and 2 cups of cold, day-old rice. Heat through and season to taste with soy sauce and pepper flakes. Makes enough for two.
  • SALAD: Toss mixed salad greens with vinaigrette of olive oil, lemon juice, salt and pepper. Divide the greens among plates. Lay a few slices of duck breast on each plate and garnish with a dollop of cherry marmalade next to the duck.
  • ANOTHER SALAD: Take a page from a chicken-salad recipe. Mix diced, smoked duck with diced celery, chopped scallions, roasted and chopped hazelnuts and a little good mayonnaise. Season with salt and pepper and serve as an open-face sandwich.
  • SOUP: Use the duck carcass the same way you would make chicken soup and you'll have, you guessed it, rich duck soup.

WEST VIRGINIA PEPPERONI ROLL : RECIPES : COOKING CHANNEL ...

West Virginia Pepperoni Roll : Recipes : Cooking Channel ... image

If you were to visit a convenience store in West Virginia, you'd quickly notice the ubiquitous clear bags encasing the state's famed dish: pepperoni rolls. Try your hand at recreating this beloved snack by filling dough pockets with shredded whole milk mozzarella and a stick of pepperoni. Be careful when you bite into the crispy finished rolls: the meat is piping hot!

Categories     main-dish

Total Time 4 hours 45 minutes

Prep Time 30 minutes

Cook Time 35 minutes

Yield 8 rolls

Number Of Ingredients 10

1 1/2 cups milk
3 tablespoons unsalted butter
2 tablespoons sugar
2 teaspoons kosher salt
2 teaspoons active dry yeast (1 packet)
3 1/2 cups all-purpose flour, plus more for dusting
1 large egg
One 6-ounce stick pepperoni, cut into 4 logs and each split in half lengthwise
1/4 cup extra-virgin olive oil
1 1/2 cups shredded whole milk mozzarella

Steps:

  • In a small saucepan, gently heat the milk and butter until the butter is melted. The milk should be just a little hotter than warm, between 100 and 115 degrees F, but not over 115 degrees F. Remove the saucepan from the heat and whisk in the sugar, salt and yeast. Let the mixture sit until the yeast is activated and foam covers the top, 5 to 8 minutes.
  • Add the flour to a large bowl and make a well in the center. Crack the egg into the middle and pour in the yeast liquid. Make the dough by mixing all ingredients together with a rubber spatula. Make sure all ingredients are incorporated; the dough will be sticky and loose. Leave the dough in the center of the bowl when it is fully incorporated. Cover the bowl with plastic wrap and let rise in a warm place until doubled in size, about 2 hours. Remove the plastic and gently re-knead the dough while still in the bowl. Form into a ball, as best you can, and cover with plastic wrap. This time allow to rest in a warm place for 1 hour.
  • After the second rise, remove the dough to a very generously floured surface, kneading to bring together. Cut the dough into 8 pieces, about 3 1/2 ounces each. Gently form each piece of dough into balls, incorporating more flour as needed. Use your hands to flatten each ball to a 4 1/2-inch circle. Brush a piece of pepperoni with oil and place in the center of the circle, along with 2 tablespoons shredded mozzarella. Fold the dough over the pepperoni, like a burrito, and place on a parchment-covered baking sheet seam side down. Repeat with the remaining pepperoni and cheese. As you place each pepperoni roll on the sheet tray, leave at least 1 inch or space around each roll to allow for a third rise (therefore you will need 2 baking sheets). Cover the rolls loosely with plastic wrap and place in a warm place for 30 minutes. The rolls will puff up just a bit.
  • Preheat the oven to 350 degrees F. Brush the tops of rolls with the remaining oil and bake in the oven 30 to 35 minutes. The rolls will have a rich golden color and crispy crust.

  • Preheat the oven to 190-200 degrees F. Place a wide, heavy skillet or fry pan over high heat for 2 minutes. Meanwhile, rub both sides of meat with the salt and cumin. When the pan is hot (really hot) brown meat on both sides and remove from pan. Add just enough vegetable oil to cover the bottom of the pan then add the onion and garlic. Stir constantly until onion is softened. Add the tomato juice, vinegar, olives, and raisins. Bring to a boil and reduce the liquid by half. Create a pouch with wide, heavy duty aluminum foil. Place half the reduced liquid/chunk mixture on the foil, add the roast, and then top with the remaining mixture. Close the pouch, and wrap tightly in another complete layer of foil. Cook for 3 to 3 1/2 hours or until a fork pushes easily into the meat. Remove from oven and rest (still wrapped) for at least 1/2 hour. Snip off 1 corner of the foil pouch and drain the liquid into a bowl or measuring cup. Add some of the "chunkies" and puree with an immersion blender. Slice meat thinly, or pull apart with a fork. Serve with sauce.
