10 ears fresh corn with husks
¼ cup olive oil
4 tablespoons chopped fresh chives
4 tablespoons chopped fresh parsley
Salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Preheat to 350°. Roast corn, in husks, 25 minutes. Set aside and let rest until cool enough to handle.
  • Peel back outer husk, tying with twine at the base; remove and discard silks. Toss warm corn with oil, herbs, and salt and pepper to taste.

  • Heat oil in large nonstick skillet over medium-high heat. Add corn; cook 10 to 12 minutes or until corn starts to brown, stirring occasionally.
  • Stir in chili powder, salt and pepper.
