My little cousin calls this dish "Peach Cobblet" because when he was younger, he couldn't pronounce "Cobbler." This cobbler is a spin-off of my mother's recipe. The crust is buttery and flaky (I use a butter+shortening mix), it's not too thick and not too thin, and it's a FLAVORED crust, so it boasts a lot more than just butter and flour. The filling is perfect and can be adjusted to your taste. This is a REAL, TRADITIONAL STYLE COBBLER, the way it was meant to be. No biscuit-topping and no lattice-style crust here. Serve warm with premium vanilla bean ice cream or serve with whipped topping, drizzled caramel, and a sprinkle of nutmeg.

2 cups flour
1 1/2 teaspoons salt
1/2 cup sugar
1 teaspoon nutmeg
1 teaspoon cinnamon
1/3 cup shortening
1/3 cup cold butter, semi-soft
water
1/2 orange, juice of
2 tablespoons flour
2 (29 ounce) cans peach slices, drained
1/2 cup butter, melted
1 1/2 cups sugar
1 tablespoon nutmeg
2 tablespoons cinnamon
1 teaspoon salt
1 tablespoon lemon juice
1 tablespoon cornstarch

Steps:

  • Sift flour and salt into a large bowl. Mix in sugar, nutmeg, and cinnamon.
  • Cut in shortening and butter until the texture is grainy and crumbly.
  • Add 5-6 tablespoons of water at a time and gradually squeeze in the orange juice, stirring with a fork and adding touches of flour until your dough is smooth and semi-dry. Form dough into ball.
  • Preheat oven to 350 degrees.
  • Cut the dough in half. Sprinkle a dry, clean surface with a small 1 tablespoons of the flour.
  • Roll out one half of the dough in the shape of your dish and place in a small butter-greased 8x8 or 9x9 glass, square/rectangular cobbler or casserole dish.
  • Re-sprinkle surface with second tablespoon of flour and roll out second half in the same shape and set aside.
  • In a medium-sized bowl, combine peaches, butter, sugar, nutmeg, cinnamon, salt, lemon juice, and cornstarch. Taste and add more sugar, cinnamon, or nutmeg if desired.
  • Pour peaches mixture into crust and smooth over.
  • Top the baking dish with the second crust and fold bottom and top crusts over onto the cobbler to seal the cobbler.
  • Bake in center of oven at 350 degrees for 45 minutes or until golden brown.
  • Cool for at least 25 minutes before serving, allowing filling to thicken.

This Southern peach cobbler recipe makes the perfect summer dessert! It's made with warm-spiced, juicy peaches topped with a buttermilk biscuit.

3-1/4 1/4-inch 3-1/4 pounds yellow peaches (about 8), peeled, pitted and cut into 1/4-inch slices
2 1 tablespoons 2 lemon juice, from 1 lemon
1 1 About cup sugar, divided
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup all purpose flour, spooned into measuring and leveled-off with a knife
1-1/4 teaspoons baking powder
1/4 teaspoon Baking Soda
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cut into small chunks, plus more for greasing the pan
2/3 cup buttermilk (see note below to make your own)
1/2 teaspoon Almond Extract
Vanilla ice cream or sweetened whipped cream, for serving

Steps:

  • Preheat the oven to 375°F. Butter a 9-inch square or 7 x 11-inch baking dish.
  • Make the peach filling: In a large bowl, combine the peaches, lemon juice, 2/3 cup sugar, cornstarch, cinnamon and nutmeg and mix well to coat the peaches evenly. Taste the filling; it should have the perfect balance of tart and sweet. If it is too tart, add 1-2 tablespoons more sugar. Set aside.
  • Make the topping: In a medium bowl, combine the flour, 6 tablespoons of sugar, baking powder, baking soda and salt. Add the butter and blend with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the buttermilk and almond extract and stir with a spoon until just combined. It will look a little bit lumpy -- do not overmix.
  • Transfer the peach filling to the prepared baking dish (don't leave any of the juices behind) and flatten into an even layer. Drop the batter in large, evenly spaced dollops on top of the peaches. Sprinkle 1 tablespoon of sugar over the batter. Place the baking dish on a foil-lined sheet pan in the oven (to guard against spills) and bake until the bottom is bubbling and the top is golden, about 40 minutes. Let cool for 10-15 minutes, then serve with vanilla ice cream or sweetened whipped cream.
  • Cover any leftover cobbler loosely with a kitchen towel. (Do not cover with plastic wrap or the biscuit topping will get soggy.) Reheat in a 325°F oven for about 15 minutes.
  • Note: To make your own buttermilk, add 2 teaspoons of lemon juice to a liquid measuring cup. Then, add milk to the 2/3 cup line and let sit for 15 minutes, until the mixture curdles.
