Roasting red potatoes is one of my favorite way to prepare them. Some fragrant rosemary, fresh or dried, gives these potatoes a distinctive but subtle taste. Number Of Ingredients 6

2 pounds small unpeeled red potatoes, cut into wedges
2 to 3 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a 13x9-in. baking dish. Drizzle with oil. Sprinkle with the garlic, rosemary, salt and pepper; toss gently to coat. , Bake at 450° until potatoes are golden brown and tender, 20-30 minutes.

OVEN FRESH SEASONED POTATO WEDGES RECIPE | ALLRECIPES
Love these potatoes. I followed the recipe, except I used a little more olive oil and I sprinkled the wedges with parmesan instead of adding it to the bag. I added Vidalia onion wedges and whole cloves of garlic. I just threw them in the baggie after the potatoes. The onions were almost as good as the potatoes.
