Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 450 degrees F (230 degrees C).
- Line a large pie pan or quiche pan with the pie shell. Brush shell with melted butter. Sprinkle bacon in bottom of pie pan.
- Beat eggs with cream, salt, sugar, nutmeg, cayenne pepper and black pepper. Sprinkle the grated cheese over the bacon and then sprinkle the crab meat and shrimp over the cheese. Pour the egg mixture over everything and arrange the mushroom slices over the egg mixture.
- Bake in preheated oven for 10 minutes, reduce heat to 350 degrees F (175 degrees C) and continue baking until set, about 25 to 30 minutes. Let cool for 10 minutes before serving.

If you like seafood, this is the quiche for you! Serve it with a mixed fruit salad or a green salad and a glass of good white wine! Originally from an old cookbook of mine. I especially like the fact that it makes two quiches- one to eat and one to freeze for later!

Steps:
- Combine crabmeat,shrimp,cheese,green onions, and celery.
- In another bowl, combine mayonnaise,flour,wine, and eggs.
- Mix all ingredients together well, and divide the mixture between the two pie shells.
- Bake pies in a 350°F preheated oven for 35-40 minutes or until a knife inserted into the middle comes out clean.
- Quiches may be frozen before baking; bake frozen quiche in 350°Foven for 50 minutes.
- Leftover quiche may be heated in a 300°F oven for 15 minutes.

1. Lightly grease a 22 cm (9 inch) diameter loose-based flan tin. Place the 2 sheets of pastry slightly overlapping, on a work bench, and roll out until large enough to fit the prepared tin. Press the pastry into the base and side of the tin and trim off any excess with a sharp knife. Refrigerate for 20 minutes.
2. Slice or pull off any vein, membrane or hard white muscle from the scallops, leaving any roe attached. Preheat the oven to moderately hot 190°C (375°F/Gas 5).
3. Cover the pastry with baking paper, fill evenly with baking beads or uncooked rice and bake for 10 minutes. Remove the paper and rice and bake for another 10 minutes, or until lightly golden. Cool on a wire rack. If the pastry puffs up, press down lightly with a tea towel.
4. Melt the butter in a frying pan and fry the prawns and scallops for 2–3 minutes, or until cooked. Allow to cool, then arrange all the seafood over the base of the pastry shell. Sprinkle with the Cheddar.
5. Beat the eggs in a small jug, whisk in the flour, cream and milk, and season with salt and pepper. Pour over the filling. Sprinkle with fennel and Parmesan. Bake for 30–35 minutes, or until set and golden brown. Cool slightly before serving.
