Homemade Smoked Hot Links Recipe :: The Meatwave image

With a lot of spices and and beefy chuck, these hot links are bursting with flavor.

Yield 8 to 10 servings

Number Of Ingredients 17

2 lbs beef chuck
1 lb pork fatback
1/2 cup cold water
2 tablespoons minced garlic
1 1/2 tablespoons kosher salt
1 tablespoon sweet Hungarian paprika
1 tablespoon coarsely ground black pepper
2 teaspoons sugar
1 teaspoon dried marjoram
2 teaspoons ground cayenne pepper
1/2 teaspoon dried sage
Pinch of ground allscipe
Pinch of cardamom
Pinch ground cloves
Pinch of ground coriander
Pinch of cinnamon
Medium Sausage Casings

Steps:

  • In a small bowl, mix together the garlic and all the spices. Grind beef and pork fat together through the 3/8 inch plate of your meat grinder. In a large bowl, mix the ground meat and spices together, kneading with you hand until everything is well blended.
  • Stuff into medium sausage casings and tie into 6" links. Dry overnight in the refrigerator.
  • Smoke sausages at 225 degrees, until they reach an internal temperature of 155-160 degrees.
  • Serve right away, or allow to cool and reheat on a hot grill. Hot links will keep in the refrigerator for 4 - 5 days, or in the freezer for 2 months.

Delicious Hot Links Sausage Sandwich

Total Time 15 minutes

Yield 6 servings

Steps:

  • 1. In a large skillet, heat 2 tbsp oil on medium-high heat.

    2. Add sliced peppers and onions and saute until soft.

    3. Season pepper and onions with salt and pepper to taste.

    4. Place hot links in the skillet and brown for 2-3 minutes.

    5. While hot links are browning, cut sandwich rolls in half and butter each side.

    6. Place on a baking sheet with buttered sides up.

    7. Broil in oven for 4-5 minutes until butter is melted and roll is toasted.

    8. Add hot links and sliced peppers and onions to each roll.

Easy and suprisingly good. Not sure where the basic recipe idea came from, but it has been a "no time to cook" favorite of my family for a long time. This works well without the ricotta, but better with. The spicy hot links are the key ingredient. We have made this with hot Italian sausage, but the unique "personality" of the dish is altered. It also takes time to cook the the Italian sausage before adding to the sauce. The hot links can be found in the packaged meat section of the grocery store. More info on the hot links can be found on the Hillshire Farm web site (good recipe source). HINT:The hot links can be cubed and frozen in good zip lock bags so they are ready for those "unexpected guests for dinner" situations.
