This is a very simple recipe for fried oysters. You can use the same recipe for shrimp and scallops too.

2 quarts vegetable oil for deep frying
½ cup all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
12 ounces shucked oysters, drained
2 eggs, lightly beaten
¾ cup fine bread crumbs

Steps:

  • Heat deep fryer to 375 degrees F (190 degrees C).
  • Combine flour, salt and black pepper. Dredge oysters in flour mixture, dip in egg and roll in bread crumbs.
  • Carefully slide oysters into hot oil. Cook five at a time until golden brown, about 2 minutes. Drain briefly on paper towels. Serve hot.

These are the single-fried oysters that my Mom cooked at the market. A simple and delicious appetizer cooked Chesapeake Bay style.

Number Of Ingredients 7

2 cups vegetable oil for frying
1 pint shucked oysters and juice
1 egg, beaten
salt to taste
1 teaspoon ground black pepper
1 teaspoon Old Bay Seasoning TM
½ cup dry pancake mix

Steps:

  • Heat oil in a skillet over medium high heat to 350 degrees F (175 degrees C).
  • Combine oysters, oyster juice, egg, salt, pepper and Old Bay Seasoning. Gently stir in pancake mix to make a thin batter.
  • Spoon oysters one at a time into hot oil. There should be just enough batter surrounding oysters to coat them but it should not be too thick.
  • Fry until golden brown on both sides. Drain and serve.
