My Mom used to buy those wedding cookies in that pink bag, I think from Keebler, and I loved them. I came across this recipe online and tried it. It is just as good, in fact I think it's better. And they are really simple to make.

1 cup all-purpose flour
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1/2 cup butter, softened
1/2 cup pecans, finely chopped
1/2 cup powdered sugar, sifted, divided
1/2 teaspoon vanilla extract
powdered sugar

Steps:

  • Combine flour and cinnamon in a large bowl.
  • Add butter, pecans, 1/4 cup powdered sugar, and vanilla, stir well until blended. Batter will be stiff.
  • Shape dough into 1 inch balls. Place on ungreased cookie sheets.
  • Bake at 400 degrees fahrenheit for 10-12 minutes.
  • Remove cookies to wire racks to cool slightly.
  • Roll cookies in powdered sugar, and cool completely on wire rack.

Bite-sized, powdered sugar covered Danish Wedding Cookies are the perfect sweet treat with a cup of tea or coffee. Bet you can't eat just one!

Number Of Ingredients 7

½ cup (1 stick) butter, softened or at room temperature
1/2 cup toasted walnuts, very finely chopped
1/4 cup mini chocolate chips, chopped even smaller
1/3 cup powdered sugar, plus more for rolling
1.5 tsp vanilla extract
1 cup plus 2 TBSP all-purpose flour
1/8 tsp ground cinnamon

Steps:

  • Preheat your oven to 400 degrees F and adjust your rack to the middle position. 
  • Using a mixer, cream together the butter, walnuts, chocolate, 1/3 cup powdered sugar, and the vanilla. Mix just until blended. Add the flour and cinnamon and mix just until combined. The dough will be quite firm. If it’s way too firm to handle, go ahead and add 1 TBSP water. 
  • Form the wedding cookie dough into 1-inch balls. Place on ungreased cookie sheets.
  • Bake for 10-12 minutes. Remove cookies to wire racks to cool slightly. Toss or roll your Danish Wedding Cookies in powdered sugar, and then allow them to cool completely on a wire rack.
