3 tablespoons vegetable oil
1 pound baby artichokes (about 8 small), trimmed and halved
10 ounces andouille sausage, cut into 1-inch rounds
1 1/2 cups cippolini onions, peeled and halved
1 pound small red potatoes
3 tablespoons crab boil spice mix, such as Zatarain's
1 tablespoon kosher salt
1 teaspoon hot sauce, such as Crystal
1 teaspoon ground black pepper
3 bay leaves
1 jalapeno, diced
2 ears of corn (about 1 pound), cut into thirds
3 pounds live crab, purged in water to remove any debris
3 green onions, sliced, for garnish (or your favorite fresh herb)
Garlic Bread, recipe follows
2 sticks butter, softened
1 tablespoon Parmesan
1 tablespoon finely chopped fresh parsley
2 cloves garlic, minced
1 scallion, minced
Hot sauce
Salt and freshly cracked black pepper
1 French baguette, sliced horizontally

Steps:

  • In a small stockpot, heat the oil over medium heat. Saute the artichokes, sausage and onions until lightly colored, about 5 minutes. Add 12 cups (3 quarts) water, the potatoes, crab boil spice mix, salt, hot sauce, pepper, bay leaves and jalapenos. Cover the pot and bring to a boil. Reduce the heat, add the corn and cover. Cook until the corn is tender, about 10 minutes. Add the crab and cook about 7 minutes. Strain the boil through a colander. Plate immediately on a large serving dish. Garnish with sliced green onions or your favorite fresh herb. Serve with the Garlic Bread.
  • Position an oven rack in the top of the oven and preheat the broiler.
  • In a small bowl, mix the butter together with the Parmesan, parsley, garlic and scallions; add hot sauce, salt and pepper to taste. Spread the butter mixture on both halves of the baguette. Place on a sheet pan and toast under the broiler, about 2 minutes.

1 package (14 ounces) smoked turkey sausage, cut into 1/2-inch slices
2 cartons (32 ounces each) reduced-sodium chicken broth
4 cups water
1 bottle (12 ounces) light beer or 1-1/2 cups additional reduced-sodium chicken broth
1/4 cup seafood seasoning
5 bay leaves
4 medium ears sweet corn, cut into 2-inch pieces
1 pound fingerling potatoes
1 medium red onion, quartered
2 pounds cooked snow crab legs
Pepper to taste

Steps:

  • In a stockpot, heat oil over medium-high heat; brown sausage. Stir in broth, water, beer, seafood seasoning and bay leaves. Add vegetables; bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until potatoes are tender., Add crab; heat through. Drain; remove bay leaves. Transfer to a serving bowl; season with pepper.

  • 1. Preheat a gas or charcoal grill to a moderately hot temperature, about 400°F; if using coals, wait until they turn white-hot. 2. If desired, melt the butter in a large stockpot set over the grill or over moderate heat on a stove. Add the onion, crushed garlic, and a pinch of salt and pepper, sautéing until softened, 4-5 minutes. 3. Add the Old Bay seasoning and thyme leaves; cook and stir until fragrant, about 2 minutes. Stir in the water and bring to a boil over high heat. 4. Once boiling, reduce to a steady simmer and stir in the sausage and potatoes; return to a simmer and cook until the potatoes are just tender to the tip of a knife, 10-15 minutes. 5. Add the corn to the water and return to a simmer. Cook for 5 minutes and then remove from the stockpot and pat dry with paper towels. Set aside until needed. 6. Return the seafood boil to a simmer and stir in the crabs and lobster. Cover and cook for 10 minutes. 7. In the meantime, brush the corn with oil and season with a little salt and pepper. Place the corn on the grill and cook, turning a few times, until lightly charred all over, 6-8 minutes. Remove from the grill. 8. When the crab and lobster are ready, stir in the shrimp and clams. Cover and cook until the shrimp are opaque and the clams have opened, 4-5 minutes. 9. Add the parsley, lemon juice, and plenty of salt and pepper to taste to the seafood boil. This was fun. This is our 5th summer having this. Of course it 's always different! This year my DS 's Lydia brought the lobster, and Theresa brought the Dungeness crabs as well as regular crabs. This is made in those outdoor boiler-fryers. But I won 't stop you from making it on your stove top. We covered the table with plastic tablecloths then covered it with brown paper (paper used for wrapping packages). And of course you can cut down the recipe. Just leave the first 8 ingredients as is then add whatever and amount of seafood you 'd like. Don 't forget the bibs or aprons and nutcrackers, hammers, small mallets, nut picks and paper towels. Oh an empty large foil pan or a trash can for discarding the shells. Don't forget plenty of beer! Crawfish and mussels would be great in this too.
