1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons best quality cocoa powder
3/4 cup superfine sugar
3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
1 cup milk
1/3 cup plus 2 teaspoons vegetable oil
1 egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

self-raising flour 250g
fine sea salt ½ tsp
baking powder 2 tsp
cocoa powder 50g
caster sugar 100g
soft light brown sugar 60g
eggs 2 large, lightly beaten
whole milk 185ml
vegetable oil 100ml
vanilla extract 1 tsp
milk chocolate chunks 150g

Steps:

  • Heat the oven to 180C/fan 160C/gas 4. Line a 12-hole muffin tin with paper cases. 
  • Mix the flour, salt, baking powder, cocoa and sugars in a large bowl and make a well in the centre. Beat the eggs and milk in a large jug or bowl. Tip the milk mixture into the well along with the oil and vanilla. Whisk everything until you have a well-combined, smooth batter. Fold through most of the chocolate chunks. 
  • Spoon the mixture between the cupcake cases and top each one with some of the remaining chocolate chunks. Bake in the centre of the oven for 20 minutes or until risen and springy. Set aside to cool on a wire rack.
