This recipe makes very good chicken gizzards without a lot of fuss. If you like gizzards, these are tender and delicious.

1 pound chicken gizzards
¼ cup butter
salt and pepper to taste

Steps:

  • Place gizzards in a saucepan with enough water to cover by 1 inch. Bring to a boil over medium heat, cover, and cook for 1 1/2 hours. Drain and chop into bite size pieces.
  • Melt butter in a large skillet over medium-high heat. Fry gizzards in butter for about 15 minutes. Season with salt and pepper to taste.

If I had to choose my last meal, it would be my mom's fried chicken gizzards, with mashed potatoes and gravy. Mom still makes them for me every year on my birthday (and on special request!) People either love gizzards or hate them.. For those of us who LOVE them.. here is the recipe that I live for. Hope you enjoy!

Number Of Ingredients 9

2 lbs chicken gizzards
2 tablespoons salt
6 cups water
2 cups all-purpose flour
1 tablespoon salt
1 1/2 tablespoons fresh ground pepper

fresh ground pepper
shortening

Steps:

  • 2-3 hours prior to cooking. In a large bowl or dutch oven, place gizzards, water and 2 Tbls salt. Let soak. (This draws out that bloody/organ taste). Change salty water every 1/2 hour to hour, for 2-3 hours.
  • Drain gizzards. Place drained gizzards on paper toweling, and pat dry.
  • Salt and Pepper both sides of the gizzards.
  • In a large zippy bag, place flour and salt and pepper.
  • In your favorite chicken frying pan (I use Grandma's old cast-iron skillet), melt enough shortening to get 1/4" in the pan.
  • Place a handful of gizzards in flour baggie. Shake.
  • Remove gizzards from baggie. Shake off excess flour mix.
  • Gently place gizzards in the hot shortening. Cover with lid ajar. Cook for 5 mins on Medium-High heat, or until browned.
  • Turn gizzards, and cover for another 5 mins or until browned.
  • (Pleae note: Gizzards will fry better if cooked in batches. Place cooked gizzards in the oven on 'warm' or 200 degrees, between batches.).
  • Enjoy!

Sounds hard to believe, but it is possible to put a whole frozen chicken in the crock pot and have dinner in about 7-8 hours. When I buy the chicken, I unwrap it and take the gizzards out and also remove the paper placed under the bird. I also try to purchase a chicken with a pop-up timer. Then I re-wrap the bird and freeze it until I'm ready to cook it. Please keep in mind that I have a new crock pot which seems to be hotter than my old one, so cooking times may vary a bit. The original idea for this recipe came from Taste of Home. This is my modification. Hope you enjoy!

  • Remove liver from giblets and chill in the refrigerator until ready to use.  In a large saucepan over medium heat, combine the rest of the giblets, neck, onion, carrot, garlic cloves, sage, thyme rosemary, and broth. Bring to a boil, then reduce heat, cover and let simmer very gently for 1 ½ hours. Add chilled liver to broth and simmer until cooked through, about 25 minutes more.  Strain broth, discard neck and all veggies. You should have about 2 ½ cups stock at this point. Finely chop all giblets and set aside. In a large saucepan over medium heat, melt butter. Whisk in flour and cook until bubbling and just beginning to turn golden, 2 to 3 minutes.  Whisk in ½ cup of strained giblet stock into gravy at a time, waiting to fully incorporate before adding any more. Once all stock is in, let gravy simmer, mixing constantly and scraping the bottom of the pot until thickened, about 5 minutes. Season with salt and pepper and add chopped giblets back into pot.
