BLUE PLATE BEEF PATTIES RECIPE: HOW TO MAKE IT
A friend and I discovered this recipe together and both consider it a staple menu item. I fix the moist ground beef patties often for family and friends. - In a large bowl, beat the egg; stir in onions, bread crumbs and mustard. Add beef and mix well. Shape into four 1/2-in.-thick patties. , In an ungreased skillet, cook patties until meat is no longer pink, 4-5 minutes on each side; drain. , In a small bowl, combine gravy, water and horseradish; add mushrooms. Pour over patties. Cook, uncovered, until mushrooms are tender and heated through, about 5 minutes. If desired, sprinkle with parsley.

PEPPERMINT PATTIES RECIPE | ALLRECIPES
I have made these every year as one of many Christmas treats. My family really loves them, it wouldn't be Christmas without them! When you dip, tap the fork on the edge of the pan to shake off excess. Slide the patty onto waxed paper -- you can use the fork to make a little swirl on the top to make it pretty.

Steps:
- In a large mixing bowl, combine condensed milk and peppermint extract. Beat in enough confectioners' sugar, a little at a time, to form a stiff dough that is no longer sticky. Form into 1 inch balls, then place on waxed paper and flatten with fingers to form patties. Let patties dry at room temperature two hours, turning once.
- In a medium saucepan over low heat, melt chocolate with shortening, stirring often. Remove from heat. Dip patties, one at a time, into chocolate by laying them on the tines of a fork and lowering the fork into the liquid. Let cool on waxed paper until set.

- Wrap the crackers in a tea towel and smash up until fine, breaking up any big bits with your hands, then tip into a large bowl.
- Finely chop the parsley (stalks and all), then add to the bowl with the mustard (if using), and the minced beef.
- Crack the egg into the bowl, then add a good pinch of sea salt and black pepper.
- With clean hands, scrunch and mix everything up well. Divide into 6 and pat and mould each piece into a roundish shape, roughly 2cm thick.
- Place the burgers onto a plate, drizzle with oil, then cover and place in the fridge until needed – this will help to firm them up.
- To cook the burgers, preheat a large griddle or frying pan for 4 minutes on a high heat, then turn the heat down to medium.
- Place the burgers on the griddle or into the pan, then use a spatula to lightly press them down, making sure the burger is in full contact with the pan.
- Cook the burgers for 3 or 4 minutes on each side, depending on how you like them – you may need to work in batches.
- Meanwhile, wash and dry a few small lettuce leaves, tearing up the larger ones. Slice the tomatoes, peel and finely slice the red onion, then slice the gherkins lengthways as finely as you can.
- Place all the veg toppings, and the cheese (if using) on a platter and put in the middle of the table with plates, cutlery, ketchup and drinks.
- Once cooked, remove the burgers to a plate and carefully wipe the pan clean with a ball of kitchen paper.
- Halve the burger buns and lightly toast them in the pan, then serve up.
