Ingredients

2¼ lbs rinsed and brushed red potatoes
½ cup whole milk
¼ cup heavy cream
3 tbsp salted sweet cream butter
¼ cup minced garlic
to taste Salt
to taste Pepper

Steps:

Saute the garlic in a skillet until it's just fragrant.
In a large pot of water, boil the red potatoes for 20 minutes.
Remove from heat once cooked, then drain.
Add the butter, heavy cream, milk, and toasted garlic into the pot of cooked potatoes.
Using a potato masher, mash all the ingredients together.
Season with salt and pepper.
Serve and enjoy your Applebee’s-inspired garlic mashed potatoes!

2 pound(s) potatoes, peeled and cut into 1-inch cubes
4 - cloves garlic, peeled
5 - strips bacon, cut into 1/2-inch pieces
1 cup(s) thinly sliced scallions
1/2 cup(s) low-fat milk, warmed
1/2 cup(s) low-fat sour cream
1 teaspoon(s) salt
1/4 teaspoon(s) black pepper

Steps:

In a large pot, cover potatoes and garlic with lightly salted water. Boil until potatoes are fork tender.
Fry bacon in skillet until crisp; drain on paper towels. Pour out all but 1 teaspoon bacon grease from pan. Add scallions to grease, saute until soft, but not brown. Add bacon.

A friend of mine who used to work at Applebee's gave me 2 recipes that are close to a couple of my favorite dishes from that restaurant. These are not claimed to be Applebee's actual recipes but rather a close approximation. :) I love these potatoes because they are a bit lumpy and have the beautiful red skins in them. It does take a while to roast the garlic, but that step is so important to making them GOOD! Its the key to this whole recipe.

When garlic is done wash and quarter potates, leaving skin on. Boil in as small an amount of water as possible for about 20 minutes or until cooked. Drain. Add all ingredients to hot potatoes and mash by hand with a potato masher, leaving lumps to your liking. Serve immediately.
