There's nothing like pulling off a piece of Apple-Cinnamon Monkey Bread on a crisp fall morning. Try something new with your Pillsbury™ Grands!™ Flaky Cinnamon Rolls with Original Icing by turning them into classic apple monkey bread made with sliced apples flavored with cinnamon sugar. Once this easy apple pull-apart bread is ready, have your kids add the finishing touches by drizzling on the frosting or topping with raisins and chopped nuts.

2 cans (17.5 oz) refrigerated Pillsbury™ Grands!™ Flaky Cinnamon Rolls with Original Icing (5 Count)
1 medium tart apple, peeled, chopped
1/2 cup sugar
1 1/2 teaspoons ground cinnamon
1/4 cup butter, melted

Steps:

  • Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening or cooking spray.
  • Set aside icing tubs from cinnamon rolls. Separate each can of dough into 5 rolls; cut into quarters.
  • Place apple in small bowl. In another small bowl, mix sugar and cinnamon. Add 1/4 cup sugar mixture to apple; toss to coat. Sprinkle half of apple pieces in pan. Roll half of dough pieces in sugar mixture; place on apples in pan.
  • Sprinkle with remaining apple pieces. Roll remaining dough pieces in sugar mixture; place on apples. Pour melted butter over top.
  • Bake 40 to 45 minutes or until golden brown across top. Cool 10 minutes; run knife around edge of pan to loosen. Place heatproof serving plate over pan and turn over; remove pan. Cool 10 minutes longer.
  • Drizzle reserved icing over top of bread, allowing some to drizzle down sides. Pull apart to serve; serve warm.

This apple bread was a MAJOR hit in the test kitchen. We prefer Granny Smith apples for baking, but feel free to use your favorite. This one definitely belongs in our fall baking hall of fame.

Granny Smith apples, peeled and chopped

Juice of 1/2 lemon

1/3 c.

packed brown sugar

1 tsp.

ground cinnamon

1/2 c.

(1 stick) butter, softened

2/3 c.

granulated sugar

large eggs

1 tsp.

pure vanilla extract

1 1/3 c.

all-purpose flour

1 tsp.

baking powder

1/2 c.

orange juice

Steps:

  • Preheat oven to 350° and line a 9x5-inch loaf pan with parchment paper. In a large bowl, stir together chopped apples, lemon juice, brown sugar, and cinnamon. In another large bowl using a hand mixer, cream together butter and sugar until light and fluffy. Add eggs and vanilla and beat until smooth. Add flour, baking powder, and orange juice and mix until just combined.  Add half batter to prepared loaf pan, then press in half the apple mixture. Top with remaining batter, then press remaining apples on top. Bake until loaf is golden and a toothpick inserted into the center of the cake comes out clean, about 1 hour 5 minutes. Let cool completely.

Bake until a toothpick inserted in each center comes out clean, 50-55 minutes. Cool in pans 10 minutes before removing to wire racks to cool.
    Freeze option: Securely wrap cooled loaves in plastic and foil, then freeze. To use, thaw at room temperature.
