115g butter, cut into small pieces, plus extra for greasing
225g self-raising flour
115g demerara sugar
100g desiccated coconut, plus extra for sprinkling
2 large eggs, lightly beaten
4 tbsp milk

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease a 900g loaf tin and line with baking paper.
  • Sift the flour and a pinch of salt into a mixing bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Stir in the sugar, coconut, eggs and milk and mix to a soft dropping consistency.
  • Spoon the mixture into the prepared tin and smooth the surface with a palette knife. Bake for 30 mins.
  • Remove the cake from the oven and sprinkle with the extra coconut. Return the cake to the oven and bake for an additional 20-25 mins, until well risen and golden and a skewer inserted into the centre comes out clean. Leave the cake to cool slightly in the tin, then turn out onto a wire rack to cool completely.

2 tablespoons extra-virgin olive oil
1 small white onion, finely diced
2 teaspoons minced fresh ginger
1 clove garlic, minced
2 teaspoons garam masala
1 teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon salt plus a pinch, divided
¼ cup tomato paste
1 14-ounce can reduced-fat or light coconut milk (see Tip)
1 15-ounce can no-salt-added chickpeas, rinsed
1 tablespoon lemon juice
Chopped fresh cilantro for garnish

Steps:

  • Heat oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until soft and starting to brown, 3 to 4 minutes. Stir in ginger, garlic, garam masala, cumin, coriander and ¼ teaspoon salt; cook, stirring, for 1 minute. Add tomato paste and cook, stirring, for 30 seconds. Stir in coconut milk and bring to a simmer. Cook, stirring occasionally, until slightly thickened, about 5 minutes. Remove from heat.
  • Puree the sauce with an immersion blender or in a regular blender until smooth. (Use caution when pureeing hot liquids.) Return the sauce to the pot, if necessary, and add chickpeas, lemon juice and the remaining pinch of salt. Sprinkle with cilantro, if desired.
