3 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
1 tablespoon vanilla extract
Toasted finely chopped nuts or assorted jimmies

Steps:

  • Place chocolate chips and milk in a microwave-safe bowl; microwave on high for 3 minutes, stirring halfway through. Stir in vanilla. Refrigerate, covered, until firm enough to shape, about 3 hours., Shape into 1-in. balls; roll in nuts or jimmies. Place in a 15x10x1-in. pan; refrigerate until firm, about 1 hour.

1 cup unsalted roasted pistachios (if you can only find salted, that's fine; just omit adding salt)
1/2 cup white chocolate chips 
1 tablespoon sugar 
1/8 teaspoon kosher salt 
1/2 teaspoon almond extract 
1/2 teaspoon vanilla extract 
2 cups milk or almond milk

Steps:

  • For the pistachio white chocolate butter: Combine the pistachios, white chocolate chips, sugar, salt, almond extract and vanilla in a food processor and blend, scraping the sides occasionally, until very creamy and spreadable, about 10 minutes.
  • For the white hot chocolate: Gently heat the milk in a saucepan over medium heat and whisk in 4 to 6 tablespoons of the pistachio butter (4 tablespoons for a nice, light, not-too-sweet situation, or 6 for a very rich desserty sitch!). Save the remaining pistachio butter for another use.

GANACHE, SOFT FILLING FOR CHOCOLATES ETC... RECIPE - FOO…
For a "team-building" day I went with colleagues to a Delft Chocolate shop where they hand make everything and they gave us lessons! Afterward I tried a cookbook Ganache recipe and it didn't work so I went back to this shop and they gave me the quantities that we'd used in our lesson and it works very well indeed ! NOTE: I have been making these recently using my silicone ice cube moulds, and they work FANTASTICALLY! (the smaller forms work best)...they are soft and flexible enough to make these really easily and it saves the fiddly business of having to peel away the mini muffin papers off the cocolates later too. I find that we like more liqueur in ours as the flavour as I was given it was not pronounced enough for us. I sometimes use white chocolate for my filling and add a few drops of red or yellow food colour to make a creamy pink or yellow filling, with or without strawberry, lemon or banana flavouring inside a dark chocolate outside case. Please see my step-by-step photos for further reference on assembling these. 200g = 7 1/8 oz, 120g = 4 1/4 oz, 60g = 2.1 oz, 140g = 5 oz, 25g = 7/8 oz. Yield depends on the size and shape of your silicone ice-cube forms.

Oprah named this blended concoction from the New York City-based Serendipity 3 one of her “Favorite Things” in 2006 saying that it makes her want to “dance on the chandeliers.”  Started in a basement on East 58th Street in 1954, Serendipity 3 has been a top stop for many celebrities though the years. Tennessee Williams and Jackie Kennedy were regulars. Andy Warhol used to pay for his meals with original drawings. With locations now open in Boca Raton and Las Vegas, Serendipity 3 is more than just a sweet shop, and also serves omelettes, salads, pizza, and ribs. But the joint is best known for its Frrrozen Hot Chocolate, which is ordered by around 10,000 customers each month. In the restaurant, each frosty creation is made by combining a secret dry mix with milk and ice in a blender on high speed until smooth. The dessert is poured into a huge goblet, topped with whipped cream and chocolate shavings, and served with spoons and straws. The chain claims the secret mix is a blend of many different chocolates, and then released a recipe to the Oprah Winfrey Show a while back (posted on the show’s website) which supposedly revealed the secret formula. But it appears to be way off. The recipe given to Oprah says to use 6 half-ounce pieces “of your favorite chocolate,” but the chocolate in the restaurant’s secret dry mix comes only from cocoa powders. Also, the recipe doesn’t mention anything about nonfat dry milk which is a big part of the dry mix. All you have to do is look at the ingredient list on the package of mix to see “sugar, nonfat dry milk, dextrose, and cocoas.” That’s it. But you don’t need to order a 5-dollar package of mix to enjoy this dessert. I'll save you a little time and money with this original and top secret Serendipity 3 Frrrozen hot chocolate recipe I've worked up which uses three popular brands of cocoa, plus dry milk and sugar. Blend this mix with whole milk and ice and you’ll have a delicious (and cheap!) clone of Oprah’s favorite drink that tastes better than any recipe out there.   • Use a food processor to crush cookies into fine crumbs. Add all but 2 tablespoons crushed cookies to a medium bowl. Add cream cheese and vanilla and stir until evenly combined. Line a baking sheet with parchment paper. Using a small cookie scoop, form mixture into small balls. Place on prepared baking sheet and freeze until slightly hardened, about 30 minutes.  A few minutes before taking the frozen balls out of the freezer, melt the white chocolate and coconut oil: Add the white chocolate and coconut oil to a microwavable bowl, and microwave for 1 minute. Give it a stir. It may be melted at this point, if not, return to microwave in 30-second intervals.  Dip the frozen balls in melted white chocolate/coconut oil until coated, and return to baking sheet. Drizzle with semisweet chocolate. Freeze until chocolate hardens, about 15 minutes.

  • Line a 9-in. square pan with foil; grease foil with 1 teaspoon butter., In a large heavy saucepan, combine sugars, milk, corn syrup and salt. Bring to a rapid boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads 234° (soft-ball stage). Remove from heat. Add vanilla and remaining butter to pan (do not stir)., Cool, without stirring, to 110°, about 40 minutes. Beat with a spoon until fudge just begins to thicken. Add walnuts; continue beating until fudge becomes very thick and just begins to lose its sheen (about 10 minutes total). Immediately spread into prepared pan. Cool., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in airtight containers.
