1 3/4 pounds red boiling potatoes
Kosher salt
3 tablespoons butter, melted
1 tablespoon freshly chopped parsley leaves

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by 2 inches. Salt the water generously. Bring to a boil over medium heat and cook the potatoes until tender, about 15 minutes. Drain and put the potatoes in a serving bowl. Drizzle with melted butter and sprinkle with parsley. Toss and serve.

Steps:

  • Place potatoes in a Dutch oven or stockpot and cover with water. Cover and bring to a boil over medium-high heat; cook until tender, 15-30 minutes. Drain well. If desired, quarter eight potatoes and toss with butter and parsley. Refrigerate remaining potatoes.
