This is my mom's dense, excellent, and definitely unhealthy banana nut bread recipe. It's always completely gone in minutes. This is great at parties, but hazardous at home. Health Warning: EBNB may be habit forming!

Yield 2 9x5-inch loaves

Number Of Ingredients 8

2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2 cups white sugar
1 cup butter, softened
2 cups mashed overripe bananas
1 cup chopped walnuts
4 large eggs, beaten

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5-inch loaf pans.
  • Sift flour, salt, and baking soda into a large bowl.
  • Mix together sugar and butter in a separate bowl. Stir in bananas, walnuts, and eggs until well blended. Pour into the flour mixture, and stir just until blended. Divide the batter evenly between the two prepared pans.
  • Bake in the preheated oven until a knife inserted into the crown of each loaf comes out clean, 60 to 70 minutes.
  • Remove from the oven and let loaves cool in the pans for at least 5 minutes. Turn out onto a cooling rack, and let cool completely, about 30 minutes.
  • Wrap each loaf aluminum foil to keep in the moisture. Ideally, refrigerate the loaves for 2 hours or more before serving.

Number Of Ingredients 11

1/4 cup butter, softened
3/4 cup sugar
2 large eggs, room temperature
3/4 cup mashed ripe banana (about 1 large)
1/2 cup sour cream
2-1/4 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
Optional: Additional walnuts, semisweet chocolate chips or coarse sugar

Steps:

  • Preheat oven to 350°. Beat butter and sugar until blended. Add eggs, 1 at a time, beating well after each addition. Stir in banana and sour cream. Whisk together flour, cinnamon, baking soda and salt. Add to butter mixture, stirring just until moistened. Fold in 1/2 cup walnuts., Transfer to a greased 9x5-in. loaf pan. If desired, sprinkle with additional walnuts., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack to cool.

Cool 10 minutes before removing to wire racks., While loaves are still slightly warm, whisk glaze ingredients. Drizzle over loaves, using a baking pan or parchment under racks to catch excess. Cool completely.
