2 cups raw almonds
2 cups raisins
1 teaspoon pumpkin pie spice
2 cups cubed raw pumpkin
1 cup canned coconut milk
? cup date sugar
½ scoop protein powder (such as Blendfresh™)
2 tablespoons coconut oil
1 tablespoon vanilla extract
1 tablespoon flaxseed meal
1 tablespoon pumpkin pie spice
½ teaspoon stevia extract
1 pinch sea salt

Steps:

  • Combine almonds, raisins, and 1 teaspoon pumpkin pie spice in a food processor; process until finely ground and starting to form into a ball. Press crust mixture into a 9-inch pie plate.
  • Combine pumpkin, coconut milk, date sugar, protein powder, coconut oil, vanilla extract, flaxseed meal, 1 tablespoon pumpkin pie spice, stevia extract, and salt in a high-powdered blender; blend until smooth and creamy. Pour over crust.
  • Refrigerate until pumpkin filling firms up, about 1 hour.

For all you "raw foodists" out there -- here's apple pie without cooking! I got this from a friend and have never tried it myself, but I'm sure it's good.

2 cups walnuts
1/2 cup dates, pitted and chopped
1 cup distilled water
1 cup raisins
5 apples, peeled and cored
2 tablespoons ground flax seeds
1/2 cup dry coconut powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice
1 lemon, juice of
unsweetened flaked coconut

Steps:

  • Soak raisins in distilled water.
  • Using food processor, combine crust ingredients; press into pie pan.
  • Place all filling ingredients (including water and raisins) into food processor, and pulse until a medium coarseness is achieved.
  • Place filling into pie crust, sprinkle with coconut if desired, chill and serve.
