This is a nice, low-calorie soup that's really tasty, quick and easy. A friend gave me this recipe a long time ago.

8 cups reduced-sodium chicken broth
2 cups sliced fresh spinach leaves
1 cup sliced julienne carrot
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup ground chicken
1 tablespoon minced shallots or 1 tablespoon onion
1 clove garlic, minced
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon ground black pepper
24 wonton wrappers

Steps:

  • For the raviolis: Combine chicken, shallot, garlic, salt, nutmeg and pepper in a small bowl.
  • Place rounded teaspoonful of chicken mixture in center of each of 12 wonton wrappers.
  • Moisten edges of wrappers with water.
  • Top with remaining wonton wrappers; press to seal edges.
  • Cover and refrigerate until ready to cook.
  • The soup: Combine chicken broth, spinach, carrots, salt and pepper in a large saucepan.
  • Bring to a boil over high heat.
  • Reduce heat to low; cover and simmer 10 minutes.
  • Return soup to a boil; add chicken ravioli.
  • Reduce heat to low and simmer, uncovered, 2 to 3 minutes or until ravioli are tender and rise to the surface of the soup.

Nonstick cooking spray
12 ounces skinless, boneless chicken breast, cut into 1/2-inch cubes
6 cups reduced-sodium chicken broth
½ cup sliced leek or chopped onion
1 tablespoon finely chopped peeled fresh ginger
¼ teaspoon saffron threads, slightly crushed
1 9 ounce package vegetable ravioli or herb chicken tortellini
½ cup fresh baby spinach leaves or shredded fresh spinach

Steps:

  • Lightly coat a large saucepan with cooking spray. Heat over medium-high heat. Cook and stir chicken in hot saucepan for 3 minutes.
  • Carefully add broth, leek or onion, ginger, and saffron. Bring to boiling. Add ravioli or tortellini. Return to boiling; reduce heat. Boil gently, uncovered, for 5 to 9 minutes or until ravioli or tortellini is tender, stirring occasionally. Remove from heat. Ladle into bowls. Top each bowl with several spinach leaves or shredded fresh spinach. Makes 4 servings.

  • Place the semolina flour on a board and make a well. Combine the 1 teaspoon salt with the eggs, whisk thoroughly, and pour into the well. Using a fork, slowly incorporate the flour into the eggs to make a dough. Once the dough comes together, begin kneading the dough to make it smooth and elastic. Let the dough rest for 30 minutes under an overturned bowl. Trim the stems from the mushrooms and slice the caps into strips about 1/2 inch thick. Sauté in the olive oil until tender. Place the mushrooms and the chicken breast in the bowl of a food processor. Pulse several times to combine. Add the remaining filling ingredients and pulse until thoroughly combined. Reserve in the refrigerator while you roll the pasta. Divide the dough into 6 equal pieces. Roll the dough through the pasta machine, to make sheets of dough approximately 1/16" thick (the next-to thinnest setting on the machine). Place the sheets on a lightly floured surface, covering them with a kitchen towel so they do not dry out. Cut the sheets into squares approximately 2" on each side. Place 1 teaspoon of the filling on one side of each square. Fold the empty side over the filling to form a triangle, pressing to seal the edges. If the dough does not seal tightly, brush the edges with a bit of water and reseal. Pinch the two opposite ends of the triangle together to form tortellini. Cook immediately, as described in step 5, or reserve in the refrigerator on lightly floured cloths, covered with towels, until ready to cook. Bring the veal and chicken stocks to the simmer. Crush the saffron threads between your fingers and add to the simmering stock. Meanwhile, mix together the spices and the grated cheese and reserve. Cook the tortellini in the simmering stock for about three to five minutes, checking to make sure that the filling is thoroughly cooked. Serve the tortellini in soup plates with some of the broth, and garnish each serving with some cheese and spices at the table, if desired.
