Rau Muong Xao (made with Spinach) Recipe - Food.com image

Rau Muong = water spinach/kang kong (common vegetable in South East Asia). I 'adopted' this recipe from the 'orphan recipes' list. Will try this soon, and edit it if necessary.

6 ounces rump steak
1 medium onion
1 teaspoon black pepper
1 1/2 tablespoons fish sauce (nuoc mam/nam pla)
1 teaspoon cornstarch
fresh spinach, rinsed and cut into 3 inch stalks
1 large tomatoes, sliced into thin wedges
1 clove garlic, minced
2 tablespoons oil

Steps:

  • Trim any fat from steak. Sliced thinly, against the grain.
  • Chop onion finely and combine with meat, 1/2 tsp pepper, 1/2 tablespoon fish sauce and cornstarch, set aside 10mins.
  • Heat 1 TB oil in a wok/skillet. Add the meat mixture and stir fry until meat is cooked. Remove from pan, set aside.
  • Heat remaining 1 TB oil in the pan, stir fry the garlic until fragrant.Add spinach and stir fry for 3 minutes.
  • Add remaining fish sauce and tomato.
  • Stir fry 2 minutes, then add the meat to the pan and give the mixture a good stir.
  • Sprinkle with remaining 1/2 tsp pepper and serve immediately with jasmine rice and other dishes if desired.

Steps:

  • Rau mu?ng nh?t l?y c?ng non, ng?t thành t?ng do?n dài t?m 4-5 cm. Ngâm rau trong nu?c mu?i pha loãng t?m 3 phút r?i r?a s?ch l?i, d? ráo. T?i bóc v?, d?p d?p, n?u bam ch? nên bam thô, không nên bam quá nh?, khi xào ? l?a l?n t?i d? b? cháy và gây d?ng. G?ng c?t nh?ng ph?n b? thâm den, héo úa r?i r?a s?ch, d?p d?p, bam nh?. Mì tôm cho vào bát, d? riêng các gói gia v?. N?u 1 n?i nu?c sôi r?i d?i lên d? ch?n mì. N?u mu?n an th?t giòn thì b?n ch? c?n ch?n mì t?m 20 giây, sau dó v?t ra d? ráo. Còn n?u mu?n an m?m hon thì ch?n lâu hon 1 chút nhung luu ý không ch?n mì quá chín. Ch?n mì tôm Ð? mì không b? khô và dính vào nhau, sau khi ch?n b?n nên cho 1 chút d?u an vào, tr?n d?u.
