RASPBERRY MOJITO RECIPE - BBC GOOD FOOD
Blend fresh raspberries with lime, mint, sugar, white rum and sparkling water to make a punchy raspberry mojito that's perfect for summer parties

Steps:
- Divide the raspberries, lime and sugar between two tall glasses and muddle by gently crushing with a muddler or the end of a bar spoon. The fruits should start to release their juices, which will mix with the sugar.
- Put half the mint leaves in the palm of one of your hands, then clap the other hand on top of the leaves – this bruises them just enough to release their flavour. Drop the bruised mint leaves into one of the glasses, then repeat with the remaining mint, dropping it into the second glass.
- Add a handful of ice to each glass, followed by the rum. Stir, then top up with sparkling water. Stir briefly until just combined, then serve.

- In a bowl, stir together the raspberries, sugar, and liqueur (or water) and let it sit for 10 to 15 minutes.Whip the cream with the powdered sugar until soft peaks form. Mash the raspberries with a fork until all the liquid and fruit are mashed together. Spoon half the fruit into the cream and fold once or twice with a rubber spatula; do not overmix!Add half of the remaining fruit and fold once or twice. If you want more fruit, add the rest; if not, use remaining fruit puree as a garnish on top.Serve in pretty glasses with crumbed cookies on top!***Best if made right before serving.

Combine cornstarch and water until smooth; gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with chicken.
