Steps:
- Preheat the oven to 200°C (approximately 400°F). Line the springform pan with parchment paper.
- Rinse the berries and pat dry.
- Roll out the dough, cut out a circle of about 32 cm (approximately 12 inches) in diameter and put it into the pan. The edge should extend well beyond the pan. Mix the crème fraîche with the lemon zest, lemon juice, 2 tablespoons sugar and 1 tablespoon vanilla sugar until smooth. Spread the cream on the pastry, leaving the edge free. Mix the berries with 3-4 tablespoons sugar and the remaining vanilla sugar and put on top of the crème fraîche mixture. Fold in the edges and pleat evenly around. Brush with the melted butter. Sprinkle with the remaining sugar and bake until golden brown, about 25 minutes, in the oven. Then allow to cool slightly, remove from the pan and serve hot or cooled, garnished with mint, as desired.
