Top Secret Recipes | Popeyes Spicy Mayonnaise image

The ridiculously popular crispy chicken sandwich at Popeyes comes with your choice of regular mayonnaise or kicked-up spicy mayonnaise. Fortunately, I was able to hack the sandwich before it sold out just a couple weeks after its debut (get the recipe here), but that recipe includes just plain mayonnaise. Recently I had the chance to hack the secret spicy mayonnaise, and I’m glad I did. Popeyes chicken sandwich with regular mayonnaise is crazy good, but with spicy mayonnaise, that sandwich is great. You can use this sauce on a variety of sandwiches and burgers, or as a dip for chicken fingers, nuggets, and fried shrimp. 2 tablespoons plus 2 teaspoons dried minced onion
1 tablespoon dried parsley flakes
2-1/2 teaspoons paprika
2 teaspoons sugar
2 teaspoons salt
2 teaspoons pepper
1-1/2 teaspoons garlic powder
ADDITIONAL INGREDIENTS FOR DRESSING:
1 cup mayonnaise
1 cup buttermilk
ADDITIONAL INGREDIENTS FOR DIP:
1 cup sour cream

Steps:

  • In a small bowl, combine the first seven ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: about 6 tablespoons mix (enough to make 6 batches). , To prepare dressing: In a bowl, combine 1 tablespoon mix with mayonnaise and buttermilk; refrigerate. Yield: 2 cups., To prepare dip: In a bowl, combine 1 tablespoon mix and sour cream; refrigerate for at least 1 hour before serving.

I like sauce consistency creamy, thick that coat the potatoes as these are dipped into the sauce. Where as for salad dressing, sauce is best little thin, creamy yet pour-able. It should not weigh-down the delicate greens but make a nice lite creamy coating.

To make ranch salad dressing increase the amount of liquid (milk, water) as suggested in notes of Recipe Card. Always remember to adjust seasonings to taste.

Crispy Ranch Potato with Ranch Sauce Drizzle

Until I perfected my homemade recipe, I always kept Hidden Valley Ranch Dressing mix in pantry. My homemade version is more flavorful, and also gives me freedom to make sauce at moment's notice without worrying to make a run to store. A quick mix of mayo, sour cream with ranch seasonings and sauce is ready. Isn't that easy? 

This Ranch Sauce has delicious garlicky ranch flavor that can't be missed. My secret to this is fresh garlic. Yes! I use fresh grated garlic instead of garlic powder. This makes a lot of difference in making Ranch Sauce tastier just as served in restaurants.
