ROASTED ASPARAGUS RECIPE - NYT COOKING
Roast asparagus this way and it becomes positively juicy. You’d think one pound would be enough for four people, but in my experience the thick stalks — the best kind to use — are really irresistible. Err on the side of extravagance, and polish up any leftovers for lunch the next day.

- Preheat the oven to 400 degrees. Oil a baking sheet or a baking dish large enough to hold the asparagus in one layer. Place the asparagus in the dish, and toss with the olive oil, salt and pepper. Place in the oven and roast for 10 to 15 minutes, until the stalks begin to shrivel and color lightly.
- Remove from the heat, toss with the thyme and season with lemon juice if desired.

How to Grill Asparagus

- Prepare the grill for direct cooking over medium heat (350° to 450°F).
- Remove and discard the tough bottom of each asparagus spear by grasping each end and bending it gently until it snaps at its natural point of tenderness, usually two-thirds of the way down the spear. For thick spears, using a vegetable peeler, peel off the outer skin from the bottom half of each remaining spear.
- Spread the asparagus on a large plate. Drizzle the oil and salt over the top. Turn the spears until they are evenly coated.
- Brush the cooking grates clean. Place the asparagus on the grill grilling (perpendicular to the grate) over direct medium heat, with the lid closed as much as possible, until browned in spots but not charred, 6 to 8 minutes, turning occasionally. Serve warm or at room temperature.

To make ranch salad dressing increase the amount of liquid (milk, water) as suggested in notes of Recipe Card. Always remember to adjust seasonings to taste.

This Ranch Sauce has delicious garlicky ranch flavor that can't be missed. My secret to this is fresh garlic. Yes! I use fresh grated garlic instead of garlic powder. This makes a lot of difference in making Ranch Sauce tastier just as served in restaurants.
