El Tonkotsu ramen es a base de cerdo, ideal para los días fríos de invierno y además con ingredientes fáciles de encontrar en nuestras tiendas. Os proponemos también cómo acabarlo para darle un toque auténtico.

600 g de casquería de cerdo
6 patas de pollo
2 carcasas de gallina
200 g de tocino
1 cebolla
6 dientes de ajo
5 cm de jengibre fresco
1 puerro
3 cebolletas frescas
200 g de champiñones
100 ml de salsa de soja
50 ml de mirin
50 ml de sake
5 g de azúcar
1 diente de ajo
1 trocito de jengibre
6 porciones de fideos para ramen
6 huevos
Semillas de sésamo
Aceite de sésamo
Brotes de soja
Alga nori

Steps:

  • Cortar la cebolla y el jengibre en tropezones y ponerlos a tostar junto con los dientes de ajo en una cazuela con un poco de aceite de girasol, unos 15 minutos
  • En una olla muy grande poner las piezas de cerdo (oreja, manitas, morro…), las carcasas de gallina y las patas de pollo, la verdura tostada, el puerro en tropezones, el blanco de las cebollas frescas, los champiñones y el tocino
  • Cubrir con agua fría yllevar a ebullición, eliminando las impurezas
  • Después de unos 15 minutos bajar el fuego, tapar y cocer unas 6-8 horas. A las 2 horas eliminar el tocino y seguir cociendo hasta que el caldo quede opaco
  • Preparar el aliño para los huevos: en un cazo hervir 5 minutos la salsa de soja, el mirin, el sake, el azúcar, el diente de ajo cortado a la mitad y un trocito de jengibre. Enfriar
  • Cocer los huevos, pelarlos y dejarlos reposar unas horas en una taza con el aliño
  • Filtrar el caldo eliminando los sólidos
  • Cocer los fideos y repartirlos en los boles de servicio
  • Cubrir con caldo caliente y terminar con un huevo cortado por la mitad en cada plato, media hoja de alga nori cortada en tiritas, un poco de verde de cebolleta picado, semillas de sésamo y unas gotas de aceite de sésamo
