2 slices rye bread
2 tablespoons thousand island dressing (or to taste)
1/4 lb thinly sliced pastrami
2 slices swiss cheese (use a good quality)
1/3 cup Coleslaw
butter, at room temperature

Steps:

  • Spread two slices of the rye bread lightly with the Thousand Island dressing (Russian salad dressing may be substituted.).
  • Top one slice of bread with a slice of Swiss cheese.
  • Put a layer of coleslaw over the cheese, then top with the sliced Pastrami, and then the other slice of Swiss cheese.
  • Top with the second slice of rye bread, dressing side down.
  • Butter the rye bread on the outside with the soft butter, and grill the sandwich in a skillet until both sides are golden brown and the cheese is melted.
  • Remove from skillet, cut in half and serve.

The Rachel Sandwich is Reuben's pretty, young cousin. Apple Slaw makes this one epic sandwich.

4 slices light rye bread
2 teaspoons butter
6 slices deli turkey breast, thick
4 slices havarti cheese
1 cup cole slaw mix
1/4 cup apple, very thinly sliced
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 tablespoon honey
1/4 cup plain greek yogurt
1 tablespoon mayonnaise
1 tablespoon sriracha chili sauce
1/2 teaspoon horseradish
1/4 teaspoon paprika

Steps:

  • In a small bowl, combine slaw mix and apple.  Add vinegar, olive oil and honey.  Toss to gently coat.  Set aside. In a separate small bowl, combine dressing ingredients and set aside. Heat a large grill pan over medium heat.  Butter bread with a ½ teaspoon of butter.  Place two bread slices face down on grill pan.  Top each bread slice with 3 slices of turkey and two slices of Havarti cheese.  Add half of the slaw mix to each sandwich and add half the dressing to each sandwich.  Top with remaining bread slice (buttered side up).  Brown sandwich for 2-3 minutes on each side or until golden brown.
