French fries with a healthy twist — because they're not, well, fried.

Steps:
- Preheat oven to 425 °F with a baking sheet in the oven
- Pull the hot sheet pan out of the oven, drizzle EVOO over it, scatter the potatoes and grill seasoning on top and return them to the oven
- Roast the potatoes, turning occasionally, until golden brown and tender, about 40 minutes

Steps:
- Preheat oven to 400°F, with rack at center
- Heat some water in a tea kettle
- Cut potatoes in half lengthwise, then cut each halved potato into 5 thin wedges
- Place in large bowl, cover with hot water and let stand 10 minutes to release starch
- Drain and dry on kitchen towel, then return to dry large bowl
- Toss the potatoes with olive oil and seasonings to coat evenly
- Line a large baking sheet with foil and parchment and arrange the potatoes in even flat rows, cut-side down
- Bake 30 minutes, then flip to opposite cut-side down and return to oven for 20 to 30 minutes more
- Serve with dipper(s) of choice

- Coarsely chop potatoes and transfer to a nonstick cookie sheet. Toss with oil, peppers, onions and seasonings and place in the oven 25 minutes, turning twice with spatula. Serve hot.

- Preheat oven to high. Cut potatoes and spread out on a cookie sheet. Coat potatoes with extra-virgin olive oil, dried herbs and steak seasoning or, salt and pepper. Spread potatoes to the corners of the cookie sheet. Cook potatoes in very hot oven 25 minutes. Turn potatoes once, half way in the cooking process. Serve fries hot from the oven.
