Vodka Sauce Recipe From Rachael Ray | Recipe - Rachae… image

Rach shares her recipe for a classic creamy vodka sauce.

Number Of Ingredients 14

2 tablespoons extra-virgin olive oil (EVOO)
2 tablespoons butter
2 crushed cloves garlic
sliced
A fat pinch of red pepper flakes 
1 cup vodka (Rach likes Tito's)
One 28-ounce can diced or whole Italian tomatoes (if using whole
crush into pieces by hand)
1 bottle tomato passata
A sprinkle of salt
A sprinkle of sugar
A handful of basil leaves
torn
1 cup heavy cream

Steps:

  • In a large pot over medium heat, combine EVOO, 2 turns of the pan, and butter
  • When butter melts, stir in the garlic and red pepper and stir 2 minutes, add vodka and reduce by half, add tomatoes, passata, salt, sugar, and basil, and simmer 20 minutes, then add cream and reduce heat to low

Rachael shares her recipe for a creamy, quick and easy pesto pantesco—with tomatoes, capers, almonds, herbs and pecorino—tossed with short-cut pasta.

Number Of Ingredients 14

¾ cup peeled almonds
lightly toasted
2 pounds tomatoes
peeled and chopped
2 large cloves garlic
½ cup basil
½ cup parsley
½ cup mint
3 tablespoons capers
1 teaspoon red pepper flakes
1 cup grated pecorino cheese
½ cup EVOO
Salt
1 pound casarecce or other short-cut pasta

Steps:

  • Put a large pot of water on to boil
  • Listicle: Rachael Ray 8-Quart Oval Covered Pasta Pot with Pour Spout Pulse the almonds until finely chopped, then add the remaining ingredients except the EVOO
  • Pulse the sauce to combine into a thick paste, then stream in the EVOO
  • Salt the water and cook pasta 1 minute less than package directions
  • Reserve 1 cup of the starchy cooking water, drain pasta and place in large bowl
  • Add the pesto and combine and toss with the pasta, then adjust the seasoning
