APPLE, WALNUT AND FRESH CHERRY QUINOA SALAD | HY-VEE

Yield 8 1/2 cup each

Number Of Ingredients 9

0.5 c. of uncooked quinoa, prepared with Hy-Vee apple juice
0.5 c. of chopped toasted walnuts
1 c. of quartered pitted fresh cherries
1 large apple, chopped
1 large celery stalk, chopped
2 tbsp. of chopped red onion
1 tbsp. of Hy-Vee honey
0 2 to 3 tbsp Hy-Vee white balsamic raspberry blush vinegar
0 Kosher salt and black pepper, to taste

Steps:

  • 1. Prepare quinoa as directed on package, using apple juice in place of water. Cool completely in refrigerator, about 30 minutes.
  • 2. Toss cooled quinoa, walnuts, cherries, apple, celery and onion together in a large bowl.
  • 3. Mix honey and vinegar in a separate bowl. Season to taste with salt and pepper. Pour over the salad and mix well.
  • 4. Serve immediately or chill in the fridge until serving time.
  • 5. Note: If more dressing is desired, double the dressing recipe and toss with the salad.

2 cups low-sodium chicken broth
1 cup quinoa
½ cup chopped walnuts
½ cup dried cranberries
? cup crumbled feta cheese

Steps:

  • Bring chicken broth and quinoa to a boil in a saucepan. Reduce heat to low, cover, and simmer until quinoa is tender and broth has been absorbed, 15 to 20 minutes. Transfer quinoa to a bowl.
  • Stir walnuts and cranberries through the quinoa; add feta cheese and gently stir.
