Using quinoa is a great way to get a crunchy, yet low-calorie coating on fish. With spicy roast veg on the side, you have a super-tasty fish supper

500 g Butternut Squash peeled, deseeded and sliced
2 medium Red pepper(s) deseeded and sliced
1 small Red onion(s) cut into thin wedges
4 spray(s) Calorie controlled cooking spray
0.5 teaspoons, level Chilli flakes
2 clove(s) Garlic crushed
4 tablespoons Lemon Juice, Fresh
2 zest(s) of 1 Lemon(s)
4 fillet(s), medium Salmon, raw
40 g Quinoa, Dry rinsed
1 teaspoons Olive Oil
1 teaspoons, level Cumin seeds
150 g 0% fat natural Greek yogurt
75 g Spinach young-leaf

Steps:

  • Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the squash, peppers and onion on a baking tray, mist with cooking spray and add the chilli. Roast for 35 minutes, turning once.
  • Meanwhile, combine the garlic with half the zest and juice in a dish. Add the salmon, turn to coat, then cover and marinate in the fridge for 20 minutes.
  • While the veg are roasting and the fish is marinating, combine the quinoa and 200ml water in a pan over a medium-high heat. Bring to a boil then reduce the heat and simmer for 15 minutes, until the liquid has evaporated. Stir in the rest of the zest then set aside to cool. Remove the fish from the fridge then press the cooled quinoa onto the top of each fillet.
  • Heat the oil in a frying pan over a medium heat and fry the salmon, quinoa-side down, for 4 minutes. Turn and cook for a further 3 minutes.
  • Toast the cumin seeds in a dry frying pan for 2 minutes, then crush using a pestle and mortar. Combine the yogurt and remaining lemon juice then stir in the toasted cumin seeds.
  • Toss the roasted veg with the spinach and serve with the fish and spiced yogurt.

2 Tbsp. sliced almonds
2 tbsp finely chopped fresh parsley
Juice of 1 fresh orange
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
4 5 oz fillets salmon
Nonstick cooking spray
1 cup uncooked quinoa
1 15 oz can chickpeas, drained and rinsed
1 tsp extra virgin olive oil
1 tbsp dried cherries
2 tbsp finely chopped cilantro
1 tsp fresh orange zest
1/4 tsp sea salt
1/4 tsp freshly ground black pepper

Steps:

  • Preheat the oven to 425° F. Prepare a shallow baking dish with nonstick cooking spray.
  • Cook quinoa according to package directions.
  • Meanwhile, in a medium sized bowl, combine almonds, parsley, orange juice, sea salt and pepper; mix well to combine.
  • Place the salmon fillets, skin side down in the prepared baking dish. Drizzle orange juice onto each fillet, then coat each fillet with the almond parsley mixture.
  • Transfer the salmon to the oven for 10-12 minutes or until salmon is cooked through. Remove from the oven, cover with aluminum foil, and set aside on the counter for 5 minutes.
  • Meanwhile, transfer cooked quinoa to a large mixing bowl with chickpeas, olive oil, dried cherries, cilantro, orange zest, sea salt and pepper; mix well to combine.
  • Remove tin foil from the salmon and transfer to serving plates with a side of cooked quinoa.
  • Serve warm.
