This is a very quick and simple way to make an asian soup. I like a darker soy sauce in soups; I will mix shoyu and black soy sauce. I also prefer lower sodium because the chicken broth will have a lot of salt.Also, you can use white vinegar if you don't have rice.

2 cups chicken broth
1/2 tablespoon gingerroot, grated
1 tablespoon chili-garlic sauce
2 tablespoons soy sauce (to taste)
1/4 cup rice vinegar (to taste)
1 egg, beaten

Steps:

  • Mix everything but the egg in a saucepan and heat, over medium.
  • Toss in any veggies you like - scallions, seaweed, and mushrooms are my favorites for this soup. You can also add cooked chicken if you like. It's a very versatile soup.
  • Once the soup comes to a slow boil, add in the beaten egg. Let it cook for one to two minutes.
  • Serve.

A new take on hot and sour soup, this dish is classically spicy and tangy but uses easy to find ingredients. For example, tomato paste takes the place of traditional dried aromatics you’d never find in the supermarket (think: dried tree ear fungus or wood ear mushrooms). Likewise, sherry vinegar replaces rice vinegar for more complex flavor. Plus it’s a great complement to the tomato paste. The rest of the ingredients are pretty classic and easy to find; just make sure to get sliced bamboo instead of chopped bamboo. We recommend pairing one of these steaming bowls with a glass of dry Riesling for an extra-special winter meal.

4 ounces ground pork
1 cup thinly sliced shiitake mushroom caps (about 12 mushrooms)
1?½ tablespoons tomato paste
5 cups low-sodium chicken stock
3 tablespoons soy sauce
2 tablespoons sherry vinegar
3 tablespoons water
2?½ tablespoons cornstarch
2 large eggs, beaten
1 cup drained canned sliced bamboo shoots (from 1 [8-oz.] can)
1 cup drained diced extra-firm tofu (about 3 oz.)
½ cup thinly sliced scallions (about 5 small)
1 tablespoon toasted sesame oil
1?½ teaspoons white pepper

Steps:

  • Heat a large saucepan over medium-high. Add pork, and cook, stirring occasionally to crumble, until browned, 4 to 5 minutes. Add mushrooms; cook, stirring occasionally, until slightly softened, 1 to 2 minutes. Add tomato paste; cook, stirring constantly and scraping browned bits from bottom of saucepan, 1 minute. Stir in stock, soy sauce, and vinegar. Increase heat to high, and bring to a boil.
  • Whisk together water and cornstarch, and stir into pork mixture. Return to a boil, and boil until slightly thickened, 3 to 4 minutes. Add eggs boiling mixture, and gently stir. Immediately remove soup from heat. Stir in bamboo shoots, tofu, scallions, sesame oil, and pepper.

    1. Peel the garlic and deseed the chillies, then roughly chop and place into a pestle and mortar. Bash with a pinch of salt to a rough paste. Peel, finely chop and add the ginger, then bash until broken down and combined.
    2. Finely slice the mushrooms and bamboo shoots. Heat a lug of oil in a large wok or heavy-based saucepan over a medium-high heat, add the mushrooms and fry for 4 minutes, or until lightly golden. Stir in the chilli paste and bamboo shoots and fry for a further minute.
    3. Meanwhile, mix together 3 tablespoons of soy, 4 tablespoons of rice wine vinegar, the honey and a good pinch of white pepper. Stir the mixture into the pan and cook for a minute, then pour in the hot stock and bring gently to the boil. Reduce the heat to low and simmer for 10 minutes, or until slightly reduced. Meanwhile, chop the tofu into 1cm cubes, finely slice the spring onions and chives and whisk the egg well.
    4. Once reduced, remove the soup from the heat. Using a chopstick, stir the soup in a clockwise direction until you get a little whirlpool, then slowly add the beaten egg, stirring continuously to form thin ribbons. Stir in the tofu and return to the heat for 1 minute to warm through. Season to taste with soy and vinegar, then serve immediately with the spring onions and chives scattered on top.
