Golden little pancakes best served warm with your favourite toppings. They come out slightly thinner than typical pancakes; if you'd like them fluffy and thick, increase the flour and baking powder. A middle ground between crepes and pancakes; if you don't use any baking powder, they come out very similarly to crepes and you can use them as wraps for your favorite toppings, or with the baking powder, they're great as traditional flapjacks. Every pancake/waffle lover should have this recipe. If used for waffles, use 2 eggs, 6 tsp sugar, 1 1/3 cups milk, 1 1/3 cups flour, and 3/4 tsp of baking soda 2 1/4 tsp baking powder. Fast, and with only six ingredients, breakfast only gets so much easier. This is my adaptation of various recipes plus my own influence. We had a family recipe for 15 years, but this trumped even that! Hope you enjoy!

1 large egg
5 teaspoons sugar
1 1/3 cups milk
1 cup flour
3/4 teaspoon baking powder
1 1/2 tablespoons vegetable oil (optional)

Steps:

  • In a bowl or mixing jug, whisk together egg, sugar and half of milk (2/3 cup).
  • Add the flour and mix throughly.
  • Then add remaining milk (2/3 cup) and baking powder. It should be the consistency of thick cream.
  • (Optional): Add 1-1/2 tsp oil if you have trouble with sticking.
  • Beat until smooth.
  • Pour about a soup spoon sized amount onto a pre-heated lightly greased frying pan or griddle (You will need to start about medium high heat but after a few rounds you will need to drop it back to medium).
  • Flip with a spatula when the top is all bubbly (should be a lovely golden colour), and cook the other side (~45 seconds/side depending on stovetop).
  • Remove from pan and pile up on a plate (cover with a paper towel until served).
  • Serve with whatever you like and enjoy.

Simple Way to Make Speedy A Sponge Cake with Pancake Mix

70 grams Pancake mix
40 grams Sugar
2 Eggs
2 tbsp Soy milk
2 tbsp Olive oil
1 few drops Vanilla extract

Steps:

  • Preheat the oven to 170?. Place a baking liner in the cake pan.
  • Combine the eggs and sugar and whip. It's easier to whip them if you use a hand mixer. It will take about 15 minutes with a whisk, 7~8 minutes with a hand mixer.
  • Whip until the mixture forms a thick ribbon when the whisk is lifted.
  • When it's very fluffy, add the pancake mix that was shaken in a plastic bag to break up flour lumps, and fold in gently.
  • When it's mixed in, add the soy milk and mix up from the bottom. Do the same with the olive oil and vanilla extract.
  • After you have mixed everything, the batter will have lost a lot of its fluffy texture, so it's important to whip really well in Step 3.
  • Pour the batter into the baking pan. Drop it lightly once to smooth out the surface.
  • Bake for about 25 minutes at 170? while checking from time to time. Cover with aluminum foil when it starts browning midway through.
  • Insert a skewer and if it comes out clean, it's done. Take out from the oven and let it cool down a little. Peel off the liner and start decorating the cake when it's cooled.
  • The cake made by a whisk: It became a slightly thin sponge cake that is about 4 cm high and 18 cm diameter.
  • You can put a lot of decorations on an 18 cm diameter cake.
  • The sponge was a little thin, but the end product turned out to be a perfect size for kids. It was fluffy and looked great.
  • For my daughter's birthday in December 2011: I used a 15 cm diameter cake and I couldn't put a lot of decorations, but it was a perfect size for a family of 4~5 people to finish up in one sitting.
  • Christmas cake in December, 2011: I used a large baking pan, so I doubled the amount of the ingredients. It was a big gorgeous cake and more than enough for 8 adults.
  • For Hinamatsuri (Girl's Day festival) in March, 2012: Using the same amount of the ingredients but with a pound cake pan. I decorated the cake first, and cut into triangles. It was a perfect size for a family of 4~5 people.
