Jalapenos and hot sauce add spicy brightness to this creamy, intensely-cheesy queso. Serve the sauce as soon as it comes off the stove for a perfect silky texture.

Yield 6 to 8 servings; 2 3/4 cups sauce

Number Of Ingredients 10

One 9-ounce bag good-quality tortilla chips
2 tablespoons unsalted butter
1 jalapeno, minced
2 tablespoons all-purpose flour
2 cups whole milk
3 ounces sharp Cheddar, grated
3 ounces manchego cheese, grated
3 ounces Monterey Jack cheese, grated
Kosher salt and freshly ground black pepper
Hot sauce

Steps:

  • Preheat the oven to 425 degrees F and place a rack on the second-to-top position.
  • Spread out the tortilla chips on a baking sheet in a single layer. Bake until the chips are warmed through, 2 to 3 minutes. Turn off the heat and keep in the warm oven until you are ready to assemble the nachos. 
  • For the 3-cheese queso: Melt the butter in a large saucepan over medium heat. Add the jalapenos and cook until softened, stirring occasionally, 3 to 4 minutes. Stir in 1/4 cup of the milk to combine, and then stir in the flour to combine and cook until lightly browned and thick, 2 to 3 minutes. Pour in the remaining milk and bring to a boil over medium-high heat, and then reduce to a simmer and cook, stirring frequently, until thickened to the consistency of heavy cream, 6 to 8 minutes. Turn off the heat and stir in the cheeses until melted. Season with salt, black pepper and hot sauce. 
  • To serve, spread out the warm tortilla chips on a large platter. Drizzle all over with the 3-cheese queso and serve immediately.

2 tablespoons taco seasoning mix
2 teaspoons nutritional yeast
2 teaspoons onion powder
2 teaspoons garlic powder
2 tablespoons oil, or more as needed
1 (12 ounce) package vegetarian beef crumbles
1 (13 ounce) package tortilla chips

Steps:

  • Combine tofu, carrots, taco seasoning, nutritional yeast, onion powder, and garlic powder in a blender or food processor. Blend until smooth and creamy.
  • Transfer queso to a small saucepan over medium heat. Cook until hot enough to serve, 5 to 10 minutes.
  • At the same time, heat oil in a skillet over medium heat. Add vegetarian crumbles and cook and stir until browned, 8 to 10 minutes.
  • Serve tortilla chips on individual plates topped with cooked crumbles and hot queso.

  • Preheat oven to 425º and line a large baking sheet with foil. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add ground beef and cook until no longer pink, 6 minutes more. Drain fat. Add garlic and taco seasoning and season with salt. Cook until meat is well browned and slightly crispy, 5 minutes more. Add refried beans and water to skillet and stir until combined.  Add half the tortilla chips and top with beef-bean mixture, half the cheese, half the black beans, and half the pickled jalapeños. Repeat one more layer. Bake until cheese is melty, 15 minutes. Scatter with tomato, avocado, green onions, and cilantro. Drizzle with sour cream and hot sauce and serve immediately.
