Beef Quesadillas Recipe: How to Make It - Taste of Home image

Quick-cooking ground beef is the perfect ingredient for on-the-run cooks. Try serving these quesadillas with your favorite taco toppings, such as sour cream, salsa, guacamole, chopped tomatoes, shredded lettuce and sliced olives.

3/4 pound ground beef
1/2 cup refried beans
1 can (4 ounces) chopped green chilies, drained
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon salt
4 flour tortillas (8 inches)
2 tablespoons butter, melted
1-1/3 cups shredded Mexican cheese blend
Paprika

Steps:

  • Preheat oven to 475°. In a large skillet over medium heat, cook beef until no longer pink, breaking into crumbles; drain. Stir in beans, chilies, oregano, cumin and salt. Cook over medium-low heat until heated through 3-4 minutes. , Brush one side of each tortilla with butter. Spoon 1/2 cup of the meat mixture over half of unbuttered side. Sprinkle with 1/3 cup cheese; fold in half. , Place on a lightly greased baking sheet; sprinkle with paprika. Bake until crisp and golden brown, 8-10 minutes. Cut each quesadilla into 3 wedges.

onion, finely chopped

ground beef

1/2 tsp.

ground chili powder

1/2 tsp.

ground paprika

1/2 tsp.

ground cumin

Kosher salt

Freshly ground black pepper

medium flour tortillas

1 1/2 c.

Monterey Jack, shredded

1

avocado, sliced

2 tbsp.

chopped cilantro

Steps:

  • In a large pan over medium heat, heat oil. Cook onion until soft, 5 minutes. Add ground beef and spices, breaking up the meat with a wooden spoon, and season with salt and pepper. Stir occasionally and cook until the meat cooked through and no longer pink, about 8 minutes. Remove pan from heat and drain excess fat. Season mixture with salt and pepper to taste. Clean pan and return over medium heat. Meanwhile, assembly quesadillas: Divide cheese between 4 tortillas. Top with beef mixture, avocado, and cilantro then top each tortilla with a second tortilla. Working one at a time, transfer quesadillas to hot pan and cook until golden-brown underneath, about 3 minutes. When ready to flip, cover the pan with a large plate. Invert pan to transfer the quesadilla onto the plate, then slide the quesadilla back onto the pan (golden side up). Cook until golden-brown on other side.  Slice into wedges before serving.

Add taco seasoning, tomato paste, 1 tbsp water and black beans; cook on medium-low for 5 minutes. Turn off heat and mix in avocado and cilantro. Warm a large non-stick pan over medium heat with 1 teaspoon oil. Place a flour tortilla in the pan and sprinkle half with cheese, beef mixture and more cheese. Fold tortilla over and fry lightly on both sides until cheese is melted. Repeat with remaining tortillas. To save time, use two non-stick pans. Cut quesadillas into wedges and serve with lime wedges and sour cream.
