QUEPAPAS RECIPE

Steps:

• In a large bowl, mix together hash browns, eggs, jalapenos, and cheese.
• Add 1/4 cup of flour and mix well. If mixture is still too runny to hold together, gradually add more flour until it will (you should be able to form a patty with the mixture).
• Heat 1/2 inch of oil in a large skillet over medium heat.
• Take 1 heaping tablespoon of potato mixture and form into pattie. Place into a bowl of bread crumbs and turn to coat.
• Gently place patty into hot oil and fry until golden brown. Drain on brown paper bag and sprinkle with salt, if desired.
• Continue making patties as directed above until all mixture is used.

Steps:

• Boil potatoes to become soft. Microwave method: Fill a plate with water. Place two potatoes and cover with a wet paper towel. Microwave on high for 20 mins.
• Peel potatoes and shred the potatoes into a bowl.
• Mix salt, small cut green chillies, milk, cheese and optional items.
• Mash all ingredients together.
• Now make the mashed ingredients into small cutlets. Coat with bread crumps.
• Now we have 2 ways to cook: Easy & Healthy: Take a baking safe pan, spray with oil and place the cutlets in the tray. Spray with cooking oil on top. Bake at 400 degrees for 20 mins. In between turn around the patties.
• Another option is to shallow fry the patties in a pan. Enjoy with hot and sour ketchup or tomato kethcup!
