These purple sweet potato waffles are the perfect mix of sweet and savory, topped with mashed avocado and a fried egg on top. It’s like avocado toast meets waffles and it’s amazing.

2 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
2 large eggs
1 1/2 cups whole milk
1 cup mashed cooked purple sweet potato
3 tablespoons vegetable oil
2 medium avocados
1 tablespoon fresh lime juice
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes
6 fried eggs
1/2 a red onion, thinly sliced
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley

Steps:

  • To make the waffles, in a large bowl, whisk together the flour, baking powder, sugar and salt. In a separate bowl, whisk together the eggs, milk, ube, and vegetable oil until well combined. Pour into the dry ingredients and stir with a rubber spatula until the mixture comes together. Try not to over mix.
  • Pour the mixture by the 1/3 cup into a preheated greased waffle iron. Cook until lightly golden and crispy, according to the directions on your waffle iron.
  • Transfer to a wire rack and keep warm in a preheated 250 degree F oven, while you continue to make the rest.
  • Scoop out the avocado and place it in a medium bowl. Using a fork, mash together with the lime juice, salt, pepper, and a pinch of crushed red pepper flakes.
  • To assemble the waffles, top each with a bit of the mashed avocado, a fried egg, and sprinkle with crushed red pepper flakes, red onion, feta and parsley. Serve immediately and enjoy.

We made these vegan ube mochi waffles with purple yam butter (aka ube halaya) and Japanese glutinous rice flour. They're tasty, chewy, and super pretty!

180 g of Glutinous Rice Flour (Mochiko)
150 g of Ube Butter (Ube Halaya)
250 mL of Coconut Milk Drink

Steps:

  • Whisk glutinous rice flour, ube spread, and coconut milk drink in a bowl until you have a smooth and pourable batter.
  • Heat and grease the waffle maker griddles and pour in enough ube mochi batter to fill all the grooves.
  • Close the lid and cook the waffles for 5-6 minutes or until lightly crispy outside and soft inside.
  • Finish cooking the waffles and serve them warm with your favourite toppings.
