Number Of Ingredients 7

¼ cup white sugar
1?½ teaspoons kosher salt
1 teaspoon cayenne pepper
2?½ cups whole almonds
1 tablespoon water
1 tablespoon honey
1 teaspoon olive oil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 10 minutes. Watch the nuts carefully as they bake: they burn quickly.
  • Stir together the sugar, salt, and cayenne pepper in a mixing bowl; set aside.
  • Stir together the water, honey, and olive oil in a large skillet over medium heat. Once the mixture begins to bubble, stir in the toasted almonds until evenly moistened. Pour the almonds into the sugar and spice mixture, and toss until evenly coated. Spread onto baking sheets in a single layer, and cool to room temperature.

3.28 oz almonds (raw) (2/3 cups whole almonds)
2.72 oz pumpkin puree (plain) (5 1/2 tablespoons)
0.7 oz dates (pitted) (3 dates)
1 large pinch ground cinnamon (Do not include if you use spiced pumpkin puree.)
1 small pinch ground cloves (Do not include if you use spiced pumpkin puree.)
1 small pinch ground nutmeg (Do not include if you use spiced pumpkin puree.)

  • Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan., In a small bowl, combine the cracker crumbs, almonds, sugar and pumpkin pie spice; stir in butter. Press onto the bottom of prepared pan. Place on a baking sheet. Bake at 325° for 10 minutes. Cool on a wire rack., In a large bowl, beat the cream cheese and sugar until smooth. Beat in the pumpkin, eggnog, flour, syrup and spices. Add eggs; beat on low speed just until combined. Pour over crust. , Place springform pan in a large baking pan; add 1 in. of hot water to larger pan. Bake at 325° for 55-60 minutes or until center is almost set. Let stand for 5 minutes., Combine the sour cream, sugar and vanilla; spread over top of cheesecake. Sprinkle with almonds. Bake 15-18 minutes longer or until almonds are toasted. , Remove springform pan from water bath. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Remove sides of pan.
