ROASTED PUMPKIN AND BRUSSELS SPROUTS RECIPE: HOW TO MAKE IT

- Preheat oven to 400°. In a large bowl, combine pumpkin, Brussels sprouts and garlic. In a small bowl, whisk oil, vinegar, salt and pepper; drizzle over vegetables and toss to coat., Transfer to a greased 15x10x1-in. baking pan. Roast 35-40 minutes or until tender, stirring once. Sprinkle with parsley.

Brussels sprouts are roasted to perfection then tossed with crispy bacon, pumpkin seeds and feta cheese.

Steps:
- Preheat oven to 425 degrees. Place the Brussels sprouts on a large, rimmed baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
- Bake for 18-20 minutes, stirring once halfway through cooking time, until Brussels sprouts are tender and browned.
- Just before serving, toss with bacon, pumpkin seeds and feta cheese.
