This was one of my mom's favorite pie recipes. She was a great cook and was always generous with her recipes, yet she rarely shared this special one. —Ruth Ferris, Billings, Montana

1 package (10 ounces) large marshmallows
1 cup canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
2 cups whipped topping
1 graham cracker crust (9 inches)
Additional whipped topping, optional

Steps:

  • In a large saucepan, combine the first six ingredients; cook and stir over medium heat 8-10 minutes or until marshmallows are melted. Remove from heat; cool to room temperature., Fold in whipped topping. Spoon into crust. Refrigerate 3 hours or until set. If desired, serve with additional whipped topping.

melted butter

1/3 c.

granulated sugar

Pinch kosher salt

(12-oz.) package large marshmallows

1

(15-oz.) can pumpkin puree

1 tsp.

McCormick pumpkin pie spice, plus more for garnish

2 c.

whipped topping, plus more for serving 

Steps:

  • Grease a 9" pie dish with cooking spray. In a medium bowl, combine graham crackers, melted butter, sugar, and a pinch of salt. Press graham cracker mixture firmly into bottom and sides of prepared pie dish. In a medium saucepan, combine marshmallows, pumpkin puree, and pumpkin pie spice. Place over medium heat and cook, stirring, until marshmallows are melted and combined. Remove from heat and scrape into a large bowl. Let cool to room temperature.  Fold whipped topping into pumpkin mixture and scrape into prepared crust. Smooth top and refrigerate until set, about 2 hours.  Pipe whipped topping around edge of pie and sprinkle with more pumpkin pie spice.
