This easy Slow Cooker Pulled Pork is made with my homemade BBQ sauce – it smells incredible while it slow cooks all day and comes out tender and delicious.

2.5 lb boneless pork loin roast (center cut, trimmed of all fat)
2 tsp red wine vinegar
2 tsp Hickory liquid smoke
1 tsp garlic powder
1 tsp sea salt
1 cup Homemade Kansas City BBQ Sauce

Steps:

  • Place pork in the slow cooker and season with salt, vinegar, garlic powder and liquid smoke.
  • Cover and cook low 8 to 12 hours, until tender.
  • Remove pork and transfer onto a large dish; reserve all the liquid into a cup and set aside.
  • Shred the pork with two forks and put it back into the slow cooker along with about 3/4 cup of the reserved liquid and the BBQ sauce (for every 3 oz cooked pork, I used 2 tbsp BBQ sauce).
  • Cook on high 1 more hour.

ketchup

3 tbsp.

tomato paste

1/4 c.

apple cider vinegar

1 tsp.

paprika

1 tsp.

garlic powder

1 tsp.

mustard powder

(3- to 4-lb.) pork shoulder, trimmed of excess fat

Kosher salt

Freshly ground black pepper

Coleslaw, for serving

Buns, for serving

Steps:

  • Combine onion, ketchup, tomato paste, apple cider vinegar and spices in the bowl of a slow cooker. Season pork shoulder all over with salt and pepper then add to slow cooker, covering it with ketchup mixture. Cover and cook until very tender (the meat should fall apart easily with a fork!), on HIGH for 5 to 6 hours or on LOW for 8 to 10 hours.  Remove pork from slow cooker and transfer to bowl. Shred with two forks and toss with juices from the slow cooker. Serve on buns with coleslaw.
