300 grams Puff pastry dough
1 egg yolk
1 teaspoon powdered sugar
2 tablespoons Whipped cream
400 grams Dark couverture chocolate
200 milliliters Whipped cream
50 grams butter
powdered sugar (for dusting)

Steps:

  • Preheat the oven to 200°C (approximately 400°F).
  • Unfold the puff pastry and cut into 15 squares (about 8x8 cm) (approximately 3x3 inch) with a pastry wheel cutter. Place on a baking sheet lined with parchment paper. Stir the egg yolks with the powdered sugar and the cream until smooth. Spread onto the dough and bake until golden brown, for about 20 minutes, in the oven. Remove, let cool, cut and once each in half horizontally.
  • For the cream, chop the chocolate and place in a bowl. Heat the cream, pour over the chocolate and stir until the chocolate has melted. Then stir in the butter in small pieces. Cool the mixture until it begins to solidify. Then stir again vigorously and fill into a piping bag with a serrated nozzle. Pipe into the puff pastries, assemble them, and serve, dusted with powdered sugar.
