This is my recipe of a classic dish from Puerto Rico, I learned this from my mother. White Rice and Corned Beef

1 can Corned Beef
1 each Idaho Potato (peeled and cut into fries )
1 can tomato sauce
1 small white onion (diced )
2 each garlic clove (chopped)
6-8 each stuffed olives with pimento
4 sprigs fresh cilantro (chopped)
1/2 tbsp oregano (dried)
4 each culantro leaf (chopped)
1/2 tbsp basil (dried)
1/4 tbsp adobo
1/4 tbsp garlic powder
1/4 tbsp cumin (powder)
2 cups white rice (rinsed )

Steps:

  • Peel the potato and cut into french fries style, soak in water with salt, meanwhile in a sauté pan sweet onions and garlic, and add chopped cilantro and culantro leaves. Add corned beef and slowly cook add tomato sauce and all dry ingredients, garlic, oregano, adobo, basil, cumin. While that is slowly cooking in a pot heat oil and deep fry the fries until golden brown, remove from oil strain and add to the corned beef mixture, cook for 5 minutes. In a caldero (dutch oven), add a tablespoon of olive oil and rice. Stir and then add water 1/3 of a finger above rice. Bring to a boil, then simmer for 20 minutes or until rice is tender. Serve rice on bottom of plate end top with corned beef. Buen provecho

5 Tbsp canola oil
1 potato, peeled and chopped
1/2 cup chopped onion
10 garlic cloves minced
1/4 cup red bell pepper minced
1 packet Sazon
1 packet chicken bouillon
1/4 tsp Adobo
1 8- oz. can Iberia Spanish-style Tomato Sauce
6 oz. beef broth
1 can corned beef
1/4 cup green onion chopped

Steps:

  • "Fry chopped potato in canola oil. Remove from pan; drain on paper towel. Add onion, garlic, pepper, and seasonings to pan. Cook 3 minutes, stirring frequently. Add tomato sauce and beef broth; bring to a boil. Add corned beef; lower heat to simmer. It will probably be necessary to break up beef with fork. Cover and cook at least 15 minutes. Stir in potato and green onion; cook additional 5 minutes. "

Add garlic and saute for another minute or two making sure the garlic does nor brown. Add sofrito if using and saute for 1 minute. Add tomato sauce, and the rest of the spices, and potatoes.
