2 teaspoons active dry yeast
1 cup bread flour
1 cup whole wheat flour
¼ cup soy flour
¼ cup powdered soy milk
¼ cup oat bran
1 tablespoon canola oil
1 tablespoon honey
1 teaspoon salt
1 cup water

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select basic medium or regular setting; press Start.

Hearty protein bread from EAT SMARTER with just 6 grams of carbohydrates per slice is perfect for a low-carb or even ketogenic diet.

3 tablespoons Pumpkin seed
3 tablespoons Sunflower seed
4 teaspoons Sesame seeds
0.6666 cup Sweet lupine flour
0.6666 cup ground almonds
0.25 cup Coconut flour
4 tablespoons flaxseed
2 tablespoons Spelt flour
3 tablespoons Oat bran
2 teaspoons Baking powder
1 teaspoon salt
0.25 teaspoon ground cilantro
2 eggs
8 ounces Sour cream

Steps:

  • Mix pumpkin, sunflower seeds and sesame seeds, set aside 2 tablespoons. Mix remaining seeds with sweet lupine flour, almonds, coconut flour, flaxseed, spelt flour, oat bran, baking powder, salt and coriander.
  • In a large bowl, whisk eggs and sour cream until smooth, gradually mixing in the dry ingredients and 1 cup of lukewarm water with the dough hooks of the hand mixer.
  • Line a loaf pan (approx. 25 cm) with baking paper, fill in the dough, smooth it down and score it lengthwise with a knife. Sprinkle the seeds on top, press lightly, cover the bread and let it proof for 30 minutes.
  • Then place a pan filled with water on the bottom of the oven. Bake bread in a preheated oven at 200 °C/ 400°F (convection 180 °C/ 375°F) for about 10 minutes. Then reduce the temperature to 180°C/ 375°F, bake the bread for another 45 minutes. To test the cooking, stick a wooden skewer into the bread. If no dough sticks to it, it is ready. Take the bread out of the oven and let it cool down on a cake rack for about 10 minutes, then turn it over and let it cool down completely.

    1. Preheat the oven to 190ºC/375ºF/gas 5. Line a 1.5-litre loaf tin with greaseproof paper.
    2. Fill a jug with 375ml of lukewarm water, add the yeast and oil, then mix with a fork until combined and leave aside for 5 minutes.
    3. Pile the flour, ground almonds and all the seeds into a large bowl with a pinch of sea salt and make a well in the middle. Pick, finely chop and add the rosemary leaves. Crack in the eggs, add the Marmite (if using – simply leave it out for a gluten-free friendly loaf) and beat together, then pour in the yeast mixture.
    4. Whisking as you go, gradually bring in the flour from the outside until combined – it’ll be more like a batter than a dough. Pour into the prepared tin and smooth out nice and evenly on top.
    5. Now you’ve got two choices – bake it straight away and it’ll puff up a bit more and taste fantastic, or cover and place it in the fridge overnight and allow some slightly more complex sour flavours to develop. Both are brilliant, just different.
    6. To bake, place in the middle of the oven for 45 minutes, or until golden, cooked through and an inserted skewer comes out clean. Transfer to a wire rack to cool for at least 20 minutes before eating, then serve.
    7. This bread is good fresh for a couple of days, and delicious toasted for a few days after that. You could even use any leftovers to make croutons.
