1 (4- to 5-pound) rolled beef prime rib roast
6 cloves garlic, each cut lengthwise into thirds
4 medium carrots, cut into 1-inch pieces
2 medium onions, each cut into 8 wedges
1/2 cup chopped fresh parsley
2 bay leaves
1 cup water
2 teaspoons chopped fresh thyme leaves *
1 teaspoon coarsely ground pepper
1/2 teaspoon salt

Steps:

  • Heat oven to 450°F.
  • Place roast in 13x9-inch baking pan. Cut 18 slits with tip of sharp knife through fat and into meat just large enough for garlic. Insert garlic piece into each slit.
  • Place carrots, onions, parsley and bay leaves around roast; pour water over vegetables.
  • Stir together thyme, pepper and salt in small bowl; sprinkle mixture over roast. Bake 30 minutes to brown outside of roast.
  • Reduce oven temperature to 325°F. Bake 60-75 minutes or until meat thermometer reaches 130°F. Let stand 10 minutes or until meat thermometer reaches 140°F.

10 lbs prime rib roast
10 cloves garlic, minced
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons dried thyme

Steps:

  • Place the roast in a roasting pan with the fatty side up.
  • Loosen the fat from the meat by cutting with a sharp knife.
  • In a small bowl, mix together the garlic, olive oil, salt, pepper and thyme.
  • Spread the mixture under the fatty side and over it as well.
  • Secure with kitchen twine.
  • Let the roast sit out at room temperature, no longer than one hour.
  • Preheat the oven to 500 degrees.
  • Bake the roast in the preheated oven for 20 minutes, then reduce the oven temperature to 325 and continue roasting for an additional 60 to 75 minutes.
  • The Internal temperature of the roast should be at 145 degrees F (53 degrees C) for medium rare.
  • Allow the roast to rest for 10 to 15 minutes before carving so the meat can retain its juices.
